CREAMED DILL POTATOES

Tender, tiny, tasty red potatoes slathered in a creamy dill sauce make a versatile side for all kinds of meat entrees. This never-fail recipe always brings raves to Geraldine Hagemann in Rembey, Alberta.

Creamed Dill Potatoes image

Steps:

  • With a vegetable peeler, remove a strip of peel around the middle of each potato. Place potatoes in a saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender., Meanwhile, in a small saucepan, saute onion in butter until tender. Add the cream, dill, salt and pepper. Reduce heat; simmer for 4-5 minutes or until sauce is thickened. Drain potatoes; drizzle with sauce and toss gently.

1 tablespoon thinly sliced green onion
2 teaspoons butter
1/4 cup heavy whipping cream
2 to 3 teaspoons minced fresh dill
1/8 teaspoon salt
Dash pepper

Potato Nuggets with Dill & Cream image

Steps:

  • Steam or boil your new potatoe nuggets until cooked.
  • Melt butter in a skillet, add potatoes, toss to coat.
  • Mix dill into the cream.
  • Pour dilled cream over the potatoes and continue cooking over medium-low heat until the cream has turned into an almost golden sauce, stir frequently (about 10 minutes).
  • Season to taste.

  • Preheat oven to 350 degrees. In a medium bowl, combine bread crumbs, onion powder, chili powder, salt and pepper.
  • Dip the potato quarters in the butter, then roll in the crumb mixture.
  • Place on a cookie sheet, lined with parchment and bake for 60 minutes or till light brown and fork tender.

Steps:

  • Place the potatoes in a steamer basket, and set in a pan over an inch of boiling water. Cover, and steam for about 10 minutes, until potatoes are tender but not mushy.
  • In a small bowl, stir together the butter, dill, garlic, and salt. Transfer the potatoes to a serving bowl, and pour the seasoned butter over them. Toss gently until they are well-coated.

  • Rinse gently under running water, if necessary. As BC Warba New Nugget potatoes are harvested before they set their skin, there’s no need to scrub. Choose potatoes that are all the same size to ensure even cooking. You can cut them in half if desired or leave them whole, as I prefer.
  • Place potatoes in a pot and cover with cold water. Bring to a boil, add 1/2 Tbsp salt and boil for 15-20 minutes or until easily pierced with a fork. Drain potatoes.
  • In a separate pan, add 1 Tbsp olive oil. Add finely diced onion and saute over low to medium heat until golden and soft, stirring occasionally to ensure onions don’t burn. The lower and slower you sauté the onions, the sweeter they’ll be.
  • Add 1 finely minced garlic clove and sauté another minute, stirring constantly. Add 3/4 cup heavy whipping cream and 1/2 tsp salt, or add salt to taste, bring to a boil and let simmer an additional 2 minutes. Stir in 1/4 cup chopped fresh dill then remove from heat and pour sauce over potatoes.
