POTATO YEAST BREAD
Two golden round loaves with tender texture and a hint of sweetness is what you'll get when you try my mother-in-law's recipe. The blend of potato, nutmeg and lemon is unusually good for a yeast bread.

Steps:
- In a saucepan, cook potato in water until tender. Drain, reserving 3/4 cup water; cool to 120°-130°. Mash potato; measure 1/2 cup (discard any remaining potato). Add milk and 1 tablespoon butter to mashed potato (mixture will be soft)., In a bowl, combine 3 cups flour, sugar, yeast, salt, lemon zest and nutmeg. Melt remaining butter; cool to 120°-130°. Add the cooled potato water and melted butter to flour mixture; beat until moistened. Add eggs and mashed potato mixture; beat until smooth. Stir in enough remaining flour to form a firm dough., Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down; turn onto a lightly floured surface. Shape into two loaves. Place in two greased 8x4-in. loaf pans. Cover and let rise until doubled, about 1 hour. , Bake at 325° for 45-50 minutes or until golden brown. Remove from pans to wire racks to cool.

POTATO WATER BREAD (BREAD MACHINE)
When I was little, my mom made homemade bread with potato water and I had never forgotten the taste. It was sooooo goooood!!! Since then, my mom has passed but I longed for that bread. After making a few substitutions and alterations, I think I've succeeded in being able to imitate her recipe as close as possible. This recipe calls for less yeast due to the starch content in the potato water that contributes to the rising action. The first time I made this bread, the taste brought me back to the good ol' days!! A good and tasty way to use saved potato water!!! Because this bread browns up darker than most, I would suggest a light crust setting on your machine.

- In a large bowl, dissolve yeast in warm water. Add the milk, butter, potatoes, sugar, salt, whole wheat flour and 1/2 cup all-purpose flour. Beat until smooth. - In a large mixing bowl, dissolve yeast in warm water. Add sweet potatoes, 1/2 cup butter, honey, egg, salt and whole wheat flour; beat until smooth.
- Stir in enough all-purpose flour to form a soft dough.
- Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes.
- Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about an hour.
- Punch dough down. Turn onto a lightly floured surface; divide in half. Shape into loaves and place into two greased 9"x5" loaf pans. Cover and let rise until doubled, about 25 minutes.

- Peel and boil about 6 small potatoes in salted water in a small saucepan. In the meantime, measure the milk, margarine, sugar and salt together. When the potatoes have cooked through, drain them and mash in the milk mixture. Transfer into a food processor and pulse until smooth. By now, the mixture should have cooled to about 110 degrees. Sprinkle in the yeast and let rest for 10 minutes.
- Place the flour in the bowl of a stand mixer and attach the dough hook. Pour in the potato mixture and run the mixer for 10 minutes. Coat the dough ball with half of the olive oil and roll it around in the bowl. Cover the bowl with a moist cloth and let rise in a warm place for about 30 minutes or until doubled.
- Using a floured surface, knead the dough about a dozen times; coat it with the remaining olive oil and return it to the bowl. Cover with the moist cloth and let it rise again in a warm place for about 30 minutes or until doubled.
- Use cooking spray to coat two loaf pans. Punch the dough down, form it into two separate loaves and set it into the pans. Cover it and let it rise one final time in the warm place for about 15 minutes. Preheat the oven to 375 degrees.
- Mix the honey and water together and brush it over the surface of the loaves. Bake for approximately 30 minutes or until a rich golden brown, and hollow sounding when tapped. Cool for 5 minutes, then remove from pans to cool completely.

FRUITY SWEET POTATO YEAST BREAD
I love to bake yeast bread. I got the idea for this recipe from a TOH magazine, then added fruit and ingredients that I knew would help it to raise and keep it moist. I think you will like it. You may of course omit the fruit and also use all honey if you can't find the malt syrup, but it helps whole grain bread raise. This also makes excellent rolls or mini loaves.

- In large mixer bowl, put water, yeast and honey. Let foam.
- Add malt syrup, sweet potatoes, butter, egg, salt, whole wheat flour, gluten, dry milk, potato flakes, cinnamon and nutmeg. Beat for about 10 minutes.
- Gradually mix in enough white flour to make a soft dough.
- Place into a greased bowl, turn to grease top. Cover and let raise until double, about 1 hour.
- Punch dough down and make 3 loaves. Place into greased loaf pans. Cover and let double.
- Bake in a preheated 370 degree oven 50 minutes or until 190-200 degrees when tested with instant read thermometer.
- Brush with butter and cover with towel.
