Steps:
- Mix sour cream, soup, salt, potatoes, onion and cheese well.
- Pour mixture into a greased 9" x 13" baking dish.
- Sprinkle with corn flake crumbs and drizzle with butter.
- Bake in a preheated 350 degree F.

POTATOES ELIZABETH
Potato lovers unite! This deliciously different recipe uses rutabaga to jazz up the spuds. Hearty but healthy and low-fat. Try this for Thanksgiving or a potluck! Tested at high altitude.

Steps:
- Peel potatoes and rutabaga and cut into 1/2" cubes.
- Place in saucepan, cover with cold water, salt lightly, and boil until tender- about 15 minutes.
- (Be careful not to overcook.) Drain.
- (Reserve the cooking water and freeze for a delicious, nutritious soup base!) Begin preheating oven to 425F degrees (about 220C degrees).
- In a small saucepan, melt margarine.
- Whisk in flour and cook over medium-high heat for 30 seconds.
- While whisking constantly, add chicken broth and milk.
- Continue whisking until sauce comes to a boil.
- Boil gently for 2 minutes.
- Remove from heat.
- Stir in salt and pepper.
- Slice half an onion into wide rings.
- Separate rings and add to potato/rutabaga mixture.
- Toss well.
- Place in casserole dish sprayed with non-stick cooking spray.
- Sprinkle with cayenne pepper, if desired.
- Pour sauce over all.
- Sprinkle evenly with parmesan cheese.
- Bake for 15 minutes, or until top begins to brown and sauce is bubbly.
- Serves 2-4.
- NOTE: Tested at high altitude.
- You may need to reduce the amount of liquids and/or cooking times.

- Preheat oven to 450 degrees F (250 degrees C).
- Place potatoes in a large roasting pan and toss with oil, salt, pepper, and rosemary until evenly coated. Spread out potatoes in a single layer.
- Bake in preheated oven for 20 minutes, stirring occasionally. Serve immediately.

- In a 4- or 5-quart dutch oven or pot, heat the extra virgin olive oil over medium heat. Add the onion, celery, carrot, bay leaf and a big pinch of sea salt. Saute 5-7 minutes, stirring frequently until the veggies are soft.
- Turn the heat to low. Add the finely chopped or pressed garlic and cumin (or seasoning of your choice). Cook over low heat for about 2-minutes, stirring frequently until the garlic and spices are very fragrant.
- Add the chopped potatoes, lentils, 4 cups of liquid, 3/4 teaspoon sea salt (less if using salted stock) and a few turns of freshly cracked black pepper. Bring to a boil (takes about 4-5 minutes), then cover and reduce to a simmer (the low setting on my stove).
- Cook for 30-45 minutes until the lentils are soft and the liquid is absorbed. This takes about 35 minutes for green or red lentils, and 45 minutes for black lentils. The pot should be at a gentle rolling simmer. There may be a little liquid left in the pot, just leave it here and the lentils will continue to expand. Watch it carefully towards the end as all of the liquid may evaporate depending on your climate.

- Place a rack in the center of your oven and preheat the oven to 400 degrees F. For easy clean up, line a large, rimmed baking dish with parchment paper or a silicone baking mat.
