Steps:
- Cut the chicken in 1 cm cubes. Marinate the chicken in the wine, egg white, soy sauce, sugar, and salt for twenty minutes.
- Toast the almonds until they are speckled brown.
- Dice the scallions into 2 cm. pieces.
- Finely chop the ginger.
- Mix the cornstarch (thickener) well in one Tbsp. cold water.
- Heat the pan for 30 seconds on high heat. Add peanut oil and heat the pan 30 seconds more.
- Add the chicken. Cook for 7 minutes while stirring.
- Add the almonds, the scallions, and the ginger. Allow the mixture to cook 2 minutes.
- Incorporate the cornstarch mixture. Lower the flame to low heat. While turning, allow the mixture to cook one minute until all ingredients are lightly glazed.
- Pour the contents of the pan on a heated plate and serve immediately.
- Remarks:
- 1. You can replace the chicken with pork or ham. The cooking time for the meat would have to be increased from 7 to 12 minutes.
- 2. You can replace the almonds with pine nuts or cashews. You must toast the pine nuts, but you do not need to cook them with the other ingredients. You would sprinkle them on the completed dish when serving.
- 3. You may add to the dish 1/4 lb. peeled shrimp, allowing it to be cooked for three minutes with the chicken.
- 4. Instead of the scallions you may substitute small onions.

POULET AU CITRON (LEMON CHICKEN)
This recipe was adapted from recipe card collection from 1973 put out by McCall's. The recipe originated from Marrakech Restaurant in SanFrancisco. I have updated the marinating instructions to suit modern practices, but the ingredients remain unchanged. Posted by request.

Steps:
- Prepare at least two batches of marinade* by combining lemon zest, lemon juice, garlic, thyme, salt and pepper, mixing well.
- One batch is for marinating the chicken, the second batch will be used later for basting (keep it refrigerated until needed).
- Place rinsed& dried chicken quarters into a marinating container large enough to hold them and pour one batch marinade over the chicken.
- Seal container and let chicken marinate in the refrigerator 3-4 hours, turning several times to evenly coat.
- Preheat oven to 425 degrees F.
- Remove chicken from marinade and discard that batch of marinade.
- Place chicken into a lightly greased shallow baking dish big enough to hold all of the chicken.
- Brush with melted butter and bake, uncovered, 25 minutes.
- While the chicken is cooking, prepare your second batch of marinade, if you have not already done so.
- Brush chicken with some of the new batch of marinade and return to the oven.
- Bake, occasionally basting with this marinade, another 25-35 minutes or until the chicken is cooked all the way through and is nicely browned.
- Once chicken is cooked, place onto a large platter and garnish with lemon slices and parsley.
- If there is any remaining marinade, bring it to a boil in a small saucepan and cook for at least 3 minutes, then pour over the chicken.
- *Or,you can have yet another batch of marinade prepared and heat that fresh batch-reducing it slightly- if you prefer lots of sauce.
- Serve atop steamed rice, if desired.
DEEP FRIED ALMOND CHICKEN

- Chicken: Cut chicken pieces in 1-inch squares and place in large bowl.
- Stir in egg, salt, pepper and 1 TB oil and mix well.
- Stir cornstarch and flour together.
- Add chicken pieces, stirring to coat.
- Heat oil for deep-frying in wok or deep-fryer to 375°F.
- Add chicken pieces, a small batch at a time, and fry 3 to 4 minutes or until golden and crisp.
- (Do not overcook chicken or chicken will be tough). Remove chicken from oil with slotted spoon and drain on paper towels. Set aside.
- Clean wok and heat 15 seconds over high heat.
- Add 1 TB oil. Add ginger and garlic and stir-fry until fragrant.
- Add and stir-fry crushed chiles and green onions.
- Add rice wine and stir 3 seconds.
- Add cooked chicken, stirring until well mixed.
- Add to chicken and heated through.
- Sauce:.
- Add oil to WOK.
- Add the Flour and cook to make a almond colored roux.
- Add the Butter and Melt over Medium heat,.
- Add Chicken Stock and wisk until smooth.
- Add Sugar and stir until sugar is desolved.
- Add Sesame Oil and stir to blend.
- Let cook until boils and thickens, stirring constantly.
- Remove from heat and serve over Deep Fried Almond Chicken.
- Sprinkle chopped almonds on top and enjoy!
30 MINUTE ALMOND CHICKEN
This is a very delicious recipe that turns an ordinary dinner into an extraordinary meal with a springtime twist. If you want a dinner that is quick, easy, and healthy this is it! Unlike most one-dish-meals, this one has three distinct flavors that blend well. I was hesitant at first to use thigh meat as we like white meat, but I think this cut really made the dish! I found this recipe in Kraft's Food and Family (Spring 2005) Magazine.

- Toss Chicken with Dressing in plastic bag or container with lid.
- Add Chicken with Dressing to large nonstick skillet on medium-high heat and cook 4 minutes on each side (or until browned).
- Stir in Broth and bring to a boil.
- Cover and Simmer for 10 Minutes.
- Add Beans and cook 5 Minutes or until Chicken is cooked through.
- Remove Chicken from skillet (I removed the green beans also).
- Add Rice and Almonds and Remove from heat, cover and let stand for 5 minutes.

ALMOND CHICKEN
Love one dish meals! This has lots of veggies and chicken. If you have everything lined up and ready to go in the wok, this comes together quickly. If you don't have a wok, you can use a really hot Dutch oven. I don't usually serve it over rice to save carbs, but I'm sure you can.

- Combine the first five ingredients in a large bowl; add the chicken and stir well. Let stand 10 minutes. Sprinkle the cornstarch over the chicken mixture, stirring well. Set aside. (Use this time to chop vegetables).
- Pour 1 tbsp oil around the top of a preheated wok, coating the sides; heat at medium-high (325 degrees) for 1 minute.
- Add the celery and mushrooms and stir fry for 1 to 2 minutes. Add the snow peas, and stir fry 1 to 2 minutes. Add the bamboo shoots and water chestnuts, and stir-fry for 1 to 2 minutes. Remove the vegetables from the wok; set aside, and keep warm.

- Blanch almonds, then peel the skins off.
- Roast in oven at 375 for about 10-15 min (or until you are finished cooking) Add oil to wok and heat until smoking.

- Pound chicken breasts until approx 1/2-3/4 inch thick. Sprinkle with salt and garlic powder.
- Brown in a heavy pan in 1 tbsp of oil.
- While this is cooking, melt butter in seperate pan over medium heat and coarse chop almonds (a quick chopper works great for this). Add almonds to butter and saute for 3-5 minutes, or until almond are coated in butter.
- When chicken is done, drizzle 1 tbsp of honey on each chicken breast.
- Remove from heat, top with buttered almonds.

- Rice Pilaf: Heat the oil in a medium saucepan over medium heat. Add the rice and garlic and let toast for 2 minutes. When the rice is toasted and the garlic is fragrant, add 2 cups of chicken broth and let it come to a boil, lower the heat to low, cover and let the rice cook for 15-20 minutes or until the water dries up. While the rice is cooking, start on the chicken. Let stand for 5 minutes before fluffing the rice with a fork.
- Cook the chicken: Season the chicken with a generous sprinkle of salt, pepper, and 1/4 teaspoon of garlic powder. Heat the butter in a large skillet over medium high heat. Add the chicken and let cook all the way through, about 4-12 minutes depending on thickness. While the chicken is cooking, zap the green beans in the microwave for 30-45 seconds. When the chicken is cooked, remove to a plate.
- Make the sauce: Add the mushrooms to the remaining butter and sauté them for 1-2 minutes or until they soften. Sprinkle the flour and the remaining 1/4 teaspoon of garlic powder, stir to coat and let cook for 1 minute. Pour in 1 1/4 cup of chicken broth and the sour cream, use a whisk to help break up any of the flavor bits that may be stuck to the pan. Let the sauce come to a simmer and thicken. It should thicken enough to coat the back of a spoon in about 1-3 minutes, if you prefer your sauce slightly thinner, adjust with the remaining 1/4 cup of broth. Once the broth has reached your desired consistency, taste and adjust seasonings to preference. Add the chicken and beans into the skillet and drizzle with sauce. Sprinkle with the toasted almonds and serve immediately with the rice pilaf.
