LEMONY PRAWNS & AVOCADO
Make these starters up to two hours ahead and serve in glasses to show off the layers of colour

Steps:
- Mix the avocado in a bowl with the lemon or lime juice. Add the tomatoes to the bowl with 2 tbsp chives and the Tabasco, then season to taste.
- Divide the prawns between 12 glasses or glass dishes. Spoon over the avocado mixture. Mix the fromage frais with 1 tbsp chives, then season to taste. Spoon over, then sprinkle with the remaining chives. You can now chill for up to 2 hrs before serving. Brush the baguette slices with olive oil and toast on the barbecue to serve alongside.

- Make the dressing by mixing the oil and citrus juices together in a small bowl with some salt and pepper, then set aside.
- In a bowl, toss all the other ingredients, except the rocket, together with the orange segments and half of the dressing. Scatter the rocket leaves into 4 Martini glasses or small bowls, pile the salad into the centre, then drizzle with the remaining dressing just before serving.

PRAWN & AVOCADO COCKTAIL
This is my favourite appetizer especially at Christmas. It is really easy to make also. Amounts are a bit give and take depending on tastes and whether you like lots of sauce (which I do) etc. I haven't yet tried it with brandy, but have heard it is nice. Will be trying this year.

- Shred lettuce.
- Peel and cut avocado in fan like shapes.
- Mix ketchup, mayonnaise, Tabasco and brandy together until an even pink colour.
- Mix prawns into sauce, approx a handful per person.
- Serve on top of lettuce with avocado on side of plate.

- Peel the prawns. Rinse them in a large sieve under a cold tap, then pat dry with kitchen paper. Lay the prawns in a shallow dish and squeeze over 1 tbsp of the lime juice, then add a twist of pepper. Set aside.
- Chop the cucumber into small dice and tip into a dish. Spoon over the vinegar, scatter over the dill and a grating of pepper, then set aside. Halve, stone and peel the avocado, then chop into small dice. Spoon over the rest of the lime juice and toss together gently with a twist of pepper.
- For the sauce, mix together the mayonnaise, fromage frais and ketchup. Stir in the Tabasco, Worcestershire and brandy with a twist of pepper.
- To serve, put a small spoonful of the sauce into the bottom of each cocktail glass. Very coarsely chop most of the watercress, leaving a few sprigs whole. Lay the chopped watercress on top of the sauce. Drain the cucumber well, then spoon it over the watercress with the avocado. Pile over the prawns, then spoon over the rest of the sauce. Tuck in the sprigs of watercress and serve with a sprinkling of cayenne.

CAJUN-STYLE PRAWN COCKTAIL
Breathe new life into prawn cocktail, a classic Christmas cocktail. With the addition of some Cajun spices, it's a flavour-packed modern twist

Steps:
- First, combine all the ingredients for the Cajun seasoning. Mix the prawns with the buttermilk and 3 tbsp of the Cajun seasoning in a large bowl, then set aside.
- To make the sauce, combine all the ingredients in a small bowl. Season and set aside. Combine all the ingredients for the coating in a separate bowl with the remaining Cajun seasoning and a pinch of salt, then set aside.
- Take one prawn at a time, gently shake off any excess buttermilk mixture, then dip into the coating using a fork, turning to ensure it is fully covered before transferring to a plate. Leave to rest for 15 mins.
- Fill each glass almost to the top with lettuce, then spoon 2 tbsp of the sauce into each. Divide the avocado slices between four martini glasses, arranging them in a fan against the rim of each glass, so the tops are sticking up over the rims.
- Heat a 10cm depth of oil in a shallow saucepan or deep-fat fryer until it reaches 180C, or when a cube of bread dropped into the oil browns within 20 seconds. Fry the coated prawns in batches of 10 for 4-5 mins per batch until golden and crisp. Transfer to a plate lined with kitchen paper using a slotted spoon and leave to drain. Repeat until all the prawns are cooked, then season with salt and divide between the glasses. Sprinkle over the chives.

AVOCADO PRAWNS
Steps:
- Mash the avocados, lemon zest, lemon juice, sugar, and parsley together in a bowl. Set aside.
- Heat the olive oil in a skillet over medium-low heat; cook the garlic in the hot oil until slightly browned, about 5 minutes. Add the prawns and increase heat to medium. Season with salt and pepper. Cook and stir the prawns over medium heat until they begin to change color. Reduce heat to low. Stir the avocado mixture into the prawns; cook until the avocado is completely heated, about 2 minutes. Garnish with a little bit of black pepper to serve.

- Bring a pan of salty water to the boil. Cook the prawns until pink. Drain on kitchen paper, then cool in the fridge.
- Meanwhile, whizz the egg yolk with the mustard and lemon juice in a food processor, then add the oil in a steady stream. The mayo is ready when the blades leave a trail in the mixture. Fold in the other flavourings by hand, and adjust to taste.
- Strip the lettuce and chicory down to their hearts (the tight, inner leaves) and finely shred. Peel, stone and cut the avocados into thin wedges. Lightly toss 1 tbsp of the dressing into the prawns, lettuce, chicory and avocados. Divide between glasses. Spoon the remaining dressing on top of the cocktails and sprinkle with a little cayenne pepper. Serve with lemon wedges.
