EGG DROP SOUP (BETTER THAN RESTAURANT QUALITY!)

After many many trips to different Chinese restaurants looking for a good bowl of egg drop soup, I decided to take it upon myself to create what I feel is the ultimate in egg drop soup. I hope you enjoy it as much as I do!

Egg Drop Soup (Better than Restaurant Quality!) image

Steps:

  • In a small saucepan, combine the chicken broth, soy sauce and sesame oil. Bring to a boil. Stir together the cornstarch and water to dissolve cornstarch; pour into the boiling broth. Stir gently while you pour in the egg and yellow food coloring if using. Season with chives, salt and pepper before serving.

1 cup chicken broth
¼ teaspoon soy sauce
¼ teaspoon sesame oil
1 teaspoon cornstarch
2 teaspoons water
1 egg, beaten
1 drop yellow food coloring
1 teaspoon chopped fresh chives

½ teaspoon ground white pepper

Primal Egg Drop Soup image

Steps:

  • Dice onions and celery.
  • Melt butter over medium heat.
  • Saute onions & celery over low heat until they turn soft. Stir into broth.
  • Add ginger, soy sauce, and sesame oil. Bring to a boil. Add salt to taste.
  • Mix arrowroot powder or cornstarch with water until smooth.
  • Pour into soup and cook until thickened.
  • After soup has thickened, whisk your eggs together and pour intermittently into soup.
  • Serve in bowls and enjoy!

  • In a small saucepan, bring your bone broth to a rolling boil over medium-high heat. Flavor it with fish sauce and/or salt to taste. Remember: it’s only as savory as you make it.
  • Crack the egg in a small bowl and season with a few additional drops of fish sauce and a pinch of salt. Whisk well with a fork.
  • Remove the bone broth from the heat and stir the soup with a heat-proof spatula as you slowly pour in the whisked egg. The egg should cook on contact with the hot liquid even though you’ve removed the saucepan from the heat. The eggs should be soft and wispy rather than overcooked and chunky (ick!).
  • Transfer the soup to a bowl. (I won’t tell anyone if you use the same bowl that you whisked your egg in.) The soup tastes delicious as-is, but you can fancy it up with your favorite add-ins. My favorite garnishes include sliced spicy peppers (like red jalapeños!), minced scallions, and cilantro leaves.
