PAN-ROASTED FISH FILLETS WITH HERB BUTTER
A blast of heat in a cast-iron pan and a basting of golden butter does wonders for plain fish fillets. This life-changing method is adopted from a former chef and current fishmonger, Mark Usewicz of Mermaid's Garden in Brooklyn, who also teaches cooking classes in topics like "How to Cook Fish in a New York City Apartment." The cooking time is so short that the smell - which, if your fish is fresh and not funky, should not be overpowering - will dissipate quickly. And in the meantime, you have an easy dinner of tender fish with a toothsome crust, anointed with nutty, lemony brown butter and perfumed with herbs. You can use virtually any fish fillet, skin on or off, as long as it is not too thick. If the butter is browning too fast, reduce the heat and add a nut of cold butter to prevent scorching, or squeeze in the juice of half a lemon.

- Pat fillets dry with a paper towel. Season on both sides with salt and pepper.
- Heat a heavy 10-inch nonstick or cast-iron skillet over high heat. When the pan is hot, add the oil. Place the fillets in the pan, skin side down (if applicable), laying them down away from your body. If fillets have skin, press down gently with a spatula for about 20 seconds to prevent curling.
- Lower heat to medium and let sizzle until fish is golden and caramelized around edges, about 2 to 3 minutes. Carefully flip fillets and add butter and thyme to pan. Tilt pan slightly to let the melted butter pool at one end. Use a spoon to baste the fish with the pooled butter. Continue basting until golden all over and cooked through, 45 to 90 seconds more, depending on the thickness of your fish. Serve immediately with chopped parsley (if using) and lemon wedges.

- Place the butter in a 13-in. x 9-in. baking dish; add fish and turn to coat. Sprinkle with lemon juice and pepper. Bake, uncovered, at 450° for 5 minutes. , Meanwhile, in a large skillet over medium heat, saute garlic in oil. Add the next seven ingredients; stir-fry until vegetables are crisp-tender, about 2-3 minutes. Spoon over the fish; sprinkle with Parmesan cheese. Found in Taste of Home magazine and tweeked it a little for our taste. For a fast and low ingredient dinner it went over well. I served it with garlic rice.

- In a large skillet, combine the first eight ingredients. Bring to a boil and then reduce heat and cover and simmer for 5-7 minutes or until vegetables are crisp-tender.
- Stir in soup until blended; bring to a boil and then add fillets.

- In medium skillet mix carrot, celery, onion, water, wine, thyme and pepper. Over medium-high heat, heat to a boil. Reduce heat to low. Cover and cook 5 minutes or until vegetables are tender-crisp.
- Stir in soup. Over medium heat, heat to a boil.
- Place fish in soup mixture. Reduce heat to low. Cover and cook 5 minutes or until fish flakes easily when tested with a fork.
SALMON PRIMAVERA
Steps:
- Preheat oven to 375 degrees F. Season the salmon fillet with salt and pepper. Brush an even thick coating of the mustard all over the salmon. Place the salmon on a parchment of foil lined baking sheet. Place the fish horizontally in front of you. Starting at the left end of the fillet, lay a column of overlapping slices of zucchini. On the next row lay a column of overlapping slices of the sqush, they should be overlapping the zucchini a bit as well. On the next row lay a column of overlapping slices of tomatoes, the should slightly overlap on the squash. Begin again with the zucchini, followed by the squash, and the tomato. Continue in this fashion until the whole fillet is covered. In a small bowl, mix the breadcrumbs, dill and olive oil. Sprinkle over the top of the vegetables. Bake for 30-35 minutes. Remove one of the vegetables in the thickest part of the fillet to test to make sure the fish is done, and then coer it back up with the vegetable. Serve hot or at room temp. Can be refrigerated overnight and brought to room temp the next day.
