SWEET POTATO PUDDING
A new twist on the old standard of sweet potato pie but no crust. This has just a hint of orange flavor and is not overly sweet. You will love it! Great side dish for your Thanksgiving feast! If desired, top casserole with marshmallows and brown in oven.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Butter a 2 1/2 quart baking dish.
- Bring a large pot of water to a boil. Add potatoes and cook until tender, about 20 minutes. Drain and mash.
- In a large bowl, combine the mashed sweet potatoes, butter, brown sugar, white sugar, eggs, orange juice and vanilla; stir until smooth. Pour into buttered dish.
- Bake in preheated oven 40 minutes.

SWEET POTATO PUDDING

- Scrub and pierce sweet potatoes. Bake at 350° for 1 to 1-1/4 hours or until very tender. , Cut sweet potatoes in half; scoop out pulp and place in a large bowl. Mash with milk and egg substitute. Stir in the brown sugar, flour, raisins, orange zest, pumpkin pie spice, vanilla and salt until blended. , Transfer to a 1-1/2-qt. baking dish coated with cooking spray. Cover and bake at 350° for 1-1/4 to 1-1/2 hours or just until top is set. Cool on a wire rack for 1 hour. Refrigerate for at least 2 hours. Serve with whipped topping.

This recipe came from the back of a bag of miniature marshmellows. I forgot the official name of the recipe before I got around to writing it down on a recipe card, so this was what my brother and I came up with. Extremely simple and good.

- Melt peanut butter and chips together in microwave. Just as its melted, fold in the marshmallows.

- Place potatoes, chicken stock, pepper, garlic, sun-dried tomatoes and olive oil in a large, flat-bottomed pan over medium-high heat. Bring to a boil; reduce heat and simmer on medium heat, covered, until potatoes are very tender, about 20 minutes. Remove from heat; sprinkle Parmesan over potatoes and mash with a hand masher. Add salt to taste. Stir in basil and serve.

- First, I scrubbed the potatoes really well. Next, I cut both ends off the unpeeled potatoes and discarded the ends. Then, I cut the potatoes into 1/4-inch slices using a sharp knife. I've found that 1/4-inch is the perfect size.
- To achieve the crispy, crunchy coating, I double dipped the potatoes in the breading mix.First, while the potato slices were still damp, I added five or six slices to the breading mix in the Ziploc bag and gave the bag a shake. I removed the potatoes from the and placed them in a single layer on a piece of parchment paper. I repeated this with the remaining potatoes.Next, I dipped five or six of the coated potato slices in the egg white/milk mixture and returned them to the Ziploc bag with the breading mix. I gave the bag a good shake to coat the potatoes. Then, I returned the double coated potatoes to the parchment paper. I repeated this with the remaining potatoes.
