Puerto Rican Cabbage Salad Recipes
PUERTO RICAN CABBAGE SALAD
Cooking Light magazine, Aug. 2007. This from Olga Fuste who wrote "Diabetic Cooking for Latinos" published by the ADA. This recipe goes well with rice and beans and fish tacos according to the blurb in the magazine. A serving size is 3/4 of a cup according to the recipe notes. If you use pre-shredded carrots and cabbage, this comes together in a snap.

Steps:
- Combine first 4 ingredients in a large bowl.
- Combine juice and remaining ingredients, stirring well with a whisk.
- Drizzle juice mixture over cabbage; toss well to combine.
- Cover and chill 15 minutes.

LATIN CABBAGE AND CORN SALAD
When you get tired of eating leafy greens, this Latin-style salad is a really nice option. It's my roommate Alex's favorite!

Steps:
- Make the dressing by whisking all the ingredients together in a small bowl. Toss all the salad ingredients together in a large mixing bowl.
- Just before serving, toss the salad with the dressing. Keep refrigerated and covered until ready to use.

- Chop up 5-6 cups of green cabbage, about half of a large head of cabbage. I chop the cabbage fairly small, but not as thin as you'd slice it for coleslaw.
- Chop up 1 cup of tomatoes. (I use grape tomatoes from Costco when tomatoes aren't in season, but fresh garden tomatoes would be great in this salad.)
- Slice 1/2 cup of celery and chop 1/2 cup of celery leaves. (If the celery is large, I might cut it in half before slicing.)
