SUPER EASY PUFF PASTRY APPLE STRUDEL
Make ceratin to use a good quality apple pie filling, I use E.D.Smith brand for this, it really makes a difference in the taste. This makes two strudels, you can cut the recipe in half and use just one puff pastry sheet and one can pie filling. This takes much less time to make than your traditional strudel version, but I think it is just as good! Prep time includes 40 minutes pastry thawing time.

Steps:
- Set oven to 375 degrees.
- Lightly grease a large baking sheet, or line with parchment paper.
- Thaw the puff pastry sheet for 40 minutes at room temperature.
- In a small bowl, mix the egg and water.
- After 40 minutes, unfold the pastry sheet onto a lightly floured surface, with the short side facing you.
- Spoon the apple mixture on the bottom half of the pastry to within 1-inch of the edges, then sprinkle with raisins (if using).
- Starting at the short side, roll up like a jelly roll.
- Place seam-side down on the baking sheet, then tuck ends under to seal.
- Brush with the egg mixture.
- Cut several 2-inch slits (2-inches apart) on top.
- Repeat with the next puff pastry (if you are making two strudels).
- Bake about 35 minutes or until golden brown.
- Cool on baking sheet on a wire rack for about 30 minutes.
- Slice and serve warm.
- Sprinkle with confectioners sugar if desired.

QUICK PUFF PASTRY APPLE STRUDEL
This is an easy apple strudel version with puff pastry that is ready in less than an hour. It tastes especially delicious fresh out of the oven with some vanilla ice cream.

Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- Combine apples, 3/4 cup sugar, raisins, walnuts, and cinnamon in a large bowl for the filling.
- Dust a flat work surface lightly with flour. Unroll puff pastry and sprinkle lightly with flour. Roll out slightly and mark into 3 equal sections. Spoon filling into the central section then fold over the section on the left and brush with egg. Fold the right section on top, just like a letter. Make shallow diagonal cuts in the top layer of the apple strudel. Brush with egg and sprinkle with 1 tablespoon sugar.
- Bake in the preheated oven until apple studel is puffed up and golden, 25 to 30 minutes.

PUFF PASTRY APPLE AND RAISIN STRUDEL
Steps:
- Position an oven rack in the center of the oven and preheat to 375 degrees F.
- In a medium bowl, toss the sliced apples with the lemon juice until the apples are thoroughly coated. Add the raisins, 1/4 cup sugar, and the 2 tablespoons cold cubed butter and toss well. Set aside.
- Lightly dust the counter or work surface with flour. Lay the puff pastry on top and dust the rolling pin with additional flour. Gently roll the puff pastry to 1/8-inch thickness.
- Spread the apple and raisin mixture over the bottom half of the puff pastry square leaving about 1-inch of space along the side edges. Fold the top half of the puff pastry over and pinch to seal the edges together.
- Brush the entire strudel with the melted butter and then sprinkle with cinnamon and remaining sugar. Using a serrated knife, make 3 diagonal slits across the top of the strudel.
- Place the strudel on a parchment lined baking sheet and bake for 40 minutes, rotating halfway through cooking, until the pastry is puffed and golden brown.

- 1. Heat the oven to 375°F. Beat the egg and water in a small bowl with a fork. Stir the granulated sugar, flour and cinnamon in a medium bowl. Add the apples and raisins and toss to coat.
- 2. Sprinkle additional flour on the work surface. Unfold the pastry sheet on the work surface. Roll the pastry sheet into a 16 x 12-inch rectangle. With the short side facing you, spoon the apple mixture onto the bottom half of the pastry sheet to within 1 inch of the edge. Roll up like a jelly roll. Place seam-side down onto a baking sheet. Tuck the ends under to seal. Brush the pastry with the egg mixture. Cut several slits in the top of the pastry.
- 3. Bake for 35 minutes or until the pastry is golden brown. Let the pastry cool on the baking sheet on a wire rack for 20 minutes. Sprinkle with the confectioners' sugar, if desired.
- 4. For best results, make sure to toss the apples and raisins until they're evenly coated with the flour mixture. The flour helps to thicken the juices released by the apples as they cook.
- 5. For some nutty crunch, 1/4 cup sliced almonds may be added with the apples and raisins.
- 6. For a Vanilla Sauce to serve with the strudel, stir 3/4 cup milk, 1/2 cup light cream, 1/3 cup sugar, 4 egg yolks, beaten and 1/2 vanilla bean in a 2-quart saucepan. Cook and stir over medium heat until the mixture boils and thickens. Remove the saucepan from the heat. Cover and refrigerate for 1 hour. Remove the vanilla bean. Any leftover sauce is delicious over fresh berries or ice cream.
- 7. For Pear and Cranberry Strudel, you can substitute Bosc pears and dried cranberries for the apples and raisins in this recipe.
APPLE-CINNAMON STRUDEL

- Preheat oven to 400 degrees; line a baking sheet with parchment paper or foil. On a lightly floured work surface, unfold pastry; roll out to a 12-by-14-inch rectangle. Place on sheet; refrigerate.
- In a large skillet, melt butter over medium; reserve 1 tablespoon in a small bowl. To skillet, add apples, 1/2 cup sugar, and cinnamon. - Heat oven to 200C/180C fan/gas 6. Heat 75g of the sugar and the vanilla seeds in a medium, heavy-based frying pan over a medium-low heat for 5-8 mins, or until golden brown and caramelised. Add the apples, currants, sultanas, allspice, nutmeg and walnuts, then cook for 10 mins or until the apple is tender. Remove the apple mix from the pan with a slotted spoon and cool to room temperature.
- Line two baking trays with baking paper. Place a sheet of filo on one of the trays, then brush lightly with the melted butter. Sprinkle over 1 tsp sugar. Repeat the process until there are 3 layers of filo. Repeat with the remaining sheets of filo on the second tray.
- Divide the apple mix along the shorter edge of both pastry sheets and gently roll into 2 logs, tucking in the ends as you go. Brush with melted butter and sprinkle over 1 tbsp sugar. Can be made up to one day ahead, kept chilled. Bake for 25 mins, or until the pastry is golden brown and crisp. Let cool slightly, then cut each strudel into 6 diagonal slices. Serve two slices each with a dollop of crème fraîche on the side.

- Thaw the puff pastry sheet at room temperature for 30 minutes.
- Place the cranberries in a bowl and pour hot water to cover; let sit until plump (about 20 minutes).
- Set oven to 375 degrees.
- Lightly spray a baking sheet with cooking spray.
- In a small bowl whisk together egg and water; set aside.

- Brush the roll with egg mixture.
- Cut several 2-inch slits about 2-inches apart on top.
- Bake for about 30-35 minutes or until golden.
- Cool on baking sheet on a wire rack for about 30 minutes (or more, do not slice before the 30 minutes or the filling will spread).
- Using a sharp serrated knife slice the baked strudel and serve warm sprinkled with confectioners sugar if desired.

FLAKY APPLE STRUDEL
Here is my take on apple strudel, with a simplified version of puff pastry which is less hassle to make.

Steps:
- Firstly, in a large bowl, add the flour and half of the butter which are cut into cubes. Rub in the butter to the extent where you can still see bits of fat in the flour. Add the water and mix to form a soft dough. Knead the dough against the sides of the bowl until all the crumbs have been incorporated into the dough. (don't be tempted to add more water). Wrap and Chill for 15 minutes.
- Pat the dough into a rectangle shape, and roll into a 40 x 20 cm rectangle on a lightly floured surface. Now using the other half of the butter which has been grated and left in a freezer for 5 mins, scatter half of the shards onto the middle third of the pastry sheet. With care, fold the left third up to cover the middle third. Scatter the remaining shards on top of the side currently folded, and fold over the last third of pastry.
- Making sure the open ends are the pointing north and south, taper the dough and roll into a 40 x 20 cm rectangle. Fold into thirds and leave to freeze for 5 minutes (which is quicker). Repeat this process 3 more times whilst remembering to rotate the dough so the open ends are north and south between rolls. Once the dough is completed leave to chill until needed.
- Pre-heat your oven to 210C/190C Fan. For the filling, add the apples, sugar, sultanas, water and cinnamon to a large saucepan and stew on a medium-low heat for 15-20 minutes until the apples are tender but firm; whilst stirring occasionally. Leave to cool completely.
- Roll the dough out into a 25 x 50 cm rectangle, until the thickness represents and one-pound coin. Trim the edges with a knife and split into two squares. Spoon half of the apple filing evenly onto one half of the pastry, brush the edges with egg wash and fold the pastry over and pinch down on the edges to create a seal. Brush the remaining top half of pastry with egg wash.
- With a sharp knife, make scores along the top with about half an inch of a gap, and sprinkle on the demerara sugar. Bake for around 35-40 minutes until the pastry is golden, flaky and risen. Serve Instantly.
