Steps:
- Brown and drain ground beef. Salt and pepper to taste.
- Slice French bread in half and then cut each half in half the long way-- for 4 pieces; place on a cookie sheet. Lightly butter the bread; place slices of cheese on top.
- Add the ground beef. Spoon tomato sauce on top. Next add orgegano, lightly followed by chopped green onions.
- Place in a 350 degree oven for 15 to 20 minutes until heated through.
RANCHERO SAUCE
Steps:
- On a gas range or under a broiler, roast the green, red and poblano peppers until well charred. Let cool. Stem and seed the charred peppers. Coarsely chop and set aside.
- In a spice grinder or with a mortar and pestle, finely grind the whole guajillo and pasilla chiles and set aside.
- In a large saucepan, warm the oil over medium heat. Add the onions and cook, covered, 3 to 5 minutes. Add the guajillo and pasilla chiles, cumin, chili powder, oregano, thyme, black pepper, salt and garlic. Stir and cook until the spices become fragrant and are fully coated in oil, 3 to 5 minutes.
- Add the tomatoes, green chiles and sugar. Stir and continue to cook until the sauce starts to simmer. Reduce the heat to medium-low and continue to cook until the vegetables soften and the flavors come together, 30 to 40 minutes. Taste and add additional salt and pepper as needed.
ORIGINAL RANCH BEEF AND NOODLE SKILLET
This recipe is very simple to prepare and tastes great. The key to this meal is the Hidden Valley Ranch dressing, which really brings out the flavor of the noodles, beef and it is a meal that everybody enjoys. Good for lunch or dinner.

- Cook noodles according to package directions and drain. In a bowl, combine the sour cream, milk, and seasoning mix and stir until smooth. In a large skillet, heat the oil over medium heat, add the mushrooms and cook for 5 minutes or until the mushrooms are browned. Remove the mushrooms from the skillet. Add the beef and cook stirring to break up the meat until nicely browned. Drain the beef. Add the mushrooms back to the skillet. Add the noodles,sour cream mixture, and cheese to the skillet and stir until the cheese has melted. Serve immediately.

- Heat oil in heavy large Dutch oven over high heat. Season beef with salt and pepper. Add to Dutch oven; sauté until brown, about 5 minutes. Add onion, carrots, and garlic; sauté 5 minutes. Add tomatoes, broth chilies, olives and oregano. Bring to simmer. Reduce heat to low, cover and simmer until beef is tender, about 1 hour. Uncover; simmer until juices thicken, about 10 minutes. Season with salt and pepper. Stir in cilantro.
BEEF AND CARAMELIZED ONION ON HOT FRENCH BREAD
Now you can have sweet caramelized onion without a lot of time and effort. Cook the onion over high heat, add a bit of sugar, then reduce the heat to finish the process. If you planned ahead and have some Grilled Sirloin with Honey-Mustard Marinade (page 176), it would be wonderful in this dish.

- Preheat the oven to 300°F. Wrap the bread in aluminum foil and put in the oven.
- In a large nonstick skillet, heat the oil over high heat, swirling to coat the bottom. Cook the onion for 3 minutes, stirring constantly (using two utensils works well). Reduce the heat to medium high.
- Stir in the sugar. Cook for 3 minutes, or until the onion is richly browned, stirring constantly. Stir in the water. Remove from the heat.
- In a small bowl, whisk together the yogurt and mustard until completely blended.
- Cut the bread in half lengthwise, then cut each piece in half crosswise. Spread the yogurt mixture on the cut side. Top with the beef, and then the onion.

Great dish to serve at a BBQ or summer dinner. Easy and tasty! This recipe has been used by the women on my husband's side of the family for years. This freezes well.

- Preheat oven to 350 degrees F (175 degrees C). Spray a casserole dish with cooking spray.
- Cook and stir ground beef and onion in a skillet over medium heat until beef is browned and onions are translucent, 10 to 15 minutes. Drain well.
- Mix pork and beans, kidney beans, ketchup, brown sugar, mustard, vinegar, and salt in a large bowl. Stir hamburger mixture into bean mixture. Pour hamburger-bean mixture into prepared casserole dish.
- Bake in the preheated oven until bubbling, about 45 minutes.

- Split loaf in half horizontally. Scoop out soft centers, making top and bottom bread shells about 1/2 inch thick. Reserve centers for another use. Set bread shells, cupped side up, on a 12- by 15-inch baking sheet. Bake in a 400° oven until bread is toasted, about 8 minutes.
