CELERY POTATO CHOWDER

"I discovered this thick no-fuss soup more than 20 years ago," says Deborah Johnson of Calgary, Alberta. "Our family loves it and now our daughters prepare it themselves. It's a delicious way to finish off last night's potatoes."

Celery Potato Chowder image

Steps:

  • In a large saucepan, saute the onion, celery and mushrooms in butter until tender. Add the corn, soups, milk and potatoes. Cook and stir over medium heat until heated through. Garnish with bacon.

2 celery ribs, chopped
1/2 cup sliced fresh mushrooms
1 tablespoon butter
2 cups frozen corn, thawed
1 can (10-3/4 ounces) condensed cream of celery soup, undiluted
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1-1/2 cups milk
1 cup mashed potatoes
5 bacon strips, cooked and crumbled

REAL CELERY CHOWDER

Great for celery lovers, especially on a cold day. I got the idea from a friend of mine a couple years ago. She was making it and I was tired of asking her for all her good recipes :) ...looking through other chowder recipes for ideas and after a few trial and errors I came up with this. Also good with a bit of cooked chicken or tofu mixed in as well.

Real Celery Chowder image

Steps:

  • Cook onion, celery, and potato in a pot with water enough to cover till potatos are soft.
  • Add 3 cup milk, and all spices. Bring to a gentle boil stir often.
  • Make a mix of second milk and the flour. Stir into milk mixture. Stir together promptly and bring to a boil stirring until thickened.

2 potatoes, diced
3 cups milk
salt and pepper
1 tablespoon fresh parsley
1 tablespoon fresh thyme
1/4 cup milk
1/4 cup flour

This recipe is a combination of other New England style fish chowder recipes that I have tried over the years. All my friends think it is just the best they have ever had.

Creamy Fish Chowder image

Steps:

  • Melt butter in a large sauce pan. Add onion and celery and cook until onion is tender and translucent.
  • Add potatoes, carrots, broth, hot sauce, Old Bay, salt and pepper.
  • Cover and simmer 10 to 15 minutes until vegetables are tender.
  • Cut fish fillets into bite size pieces and add, with corn, to pot. Cook for 25 minutes.
  • Add half and half to pot and heat. Add roux until desired thickness. Stir carefully so not to mush fish. I found a roux of 2 tbsp each of flour and butter was good for me.
  • Serve with crispy bread or crackers.

New England Clam Chowder With Celery Root image

Steps:

  • Sauté pancetta over medium heat until crisp, stirring often. While it's cooking, pour the clam juice/chicken stock into a 4-cup measuring cup. Add the liquid from the cans of clams to the juice/stock, making approximately 4 ½ cups of liquid.
  • Add the diced celery and onions, cooking unti translucent.
  • Add the minced garlic and cook, stirring, until fragrant, about 30 seconds, being careful that the garlic doesn't burn.
  • Stir in the collagen, coating all of the veggies and the bacon. Continue cooking about a minute until it begins to brown.
  • Slowly pour in the clam juice/chicken stock mixture, whisking it into the flour veggie mixture. .
  • Add the celery root, thyme, and bay leaves. Increase the heat to high and bring to a boil. Reduce to a simmer; continue cooking for 20 minutes or until the celery root is soft.
  • Stir in the cream and chopped clams, and let heat through for a minute. Remove from the heat stir in the fresh parsley. Season with salt and pepper to taste.
