GERMAN APPLE CAKE
With the long, cold winters we have here, this German apple cake recipe has warmed many a kitchen. The cake is perfect for breakfast, dessert or as an evening snack. I've made it for many parties, and I've always received compliments on it. -Grace Reynolds, Bethlehem, Pennsylvania

- Preheat oven to 350°. Grease and flour a 10-in. tube pan. Combine the first 3 ingredients; set aside. , In a large bowl, beat eggs and sugar. Combine oil and orange juice and add alternately with dry ingredients to egg mixture. Beat until smooth; add vanilla and beat well. , Pour half of the batter into prepared pan. Arrange half the apples over the batter. Combine cinnamon and sugar and sprinkle half over the apples. Top with remaining batter, apples and cinnamon mixture. , Bake until a toothpick inserted in the center comes out clean, about 1 hour and 10 minutes. Cool 1 hour before removing from pan. Cool, apple side up, on a wire rack. If desired, sprinkle with confectioners' sugar.

- Heat the butter in a skillet over medium heat until the foam subsides. Cook and stir the onion until translucent, about 5 minutes. Add the apples, and cook and stir until the onion and apples are starting to brown and the apples are soft, about 10 more minutes. Sprinkle on salt to taste.

REAL GERMAN APPLE STRUDEL
This recipe was brought over from Germany by my Great Aunt Martha Mueller. Hope you enjoy this recipe as much as my family does. Great topped with ice cream, whipped cream or milk like my Uncle did.

- 1. Dough: Mix flour, salt, baking powder, sugar, cinnamon, buttery flavored shortening and eggs to soft consistency. Add flour a tiny bit at a time,if more is needed, until not sticky just tacky.Dough is ready if you can put your finger in the dough and it comes out clean and not sticky. Knead dough about 10 minutes. Do not over mix- dough will be tough. Divide dough into 3 equal parts. Grease bowls and put a piece of dough in each bowl,turning to grease top. Let set for about 1 hour covered.
- 2. Peel apples. Butter 3- 9x13-inch cake pans any 3 pan as long as they have sides will do.( these strudel can be frozen unbaked or baked for 3 months).
- 3. Mix the sour cream,sugar, vanilla and milk together in a medium bowl until gravy thin. Set aside. Next: Lay out a clean dish towel.Sprinkle with a bit of flour.Roll or stretch out 1 piece of the dough very, very thin as possible. About 1/8 inch thick(don't worry about edges,you can cut them off.
- 4. Combine apples, raisins,sugar and cinnamon and mix well. Using a pastry brush spread 1/3 of the cream mixture on the dough. Using 1/3 of the apple mixture spoon mixture on one side of the dough the long side. Drizzle on some melted butter. Roll up like a jelly roll. Tuck in ends. Place in one of the prepared pans. Brush top with cream mixture,so top does not get crusty. Cut a few slits over top. Set aside. Repeat directions with the remaining doughs. Bake in 400^ oven for 10 minutes then reduce heat to 350^ and bake for about 45 minutes more. --- REMEMBER THIS MAKE 3 STRUDEL SO YOU CAN FREEZE SOME FOR THE HOLIDAYS.- UP TO 3 MONTHS.
GERMAN APPLE CAKE I
This German Apple Cake is a moist dense cake that keeps well. It has been a family favorite for twenty years.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9x13 inch cake pan.
- In a mixing bowl; beat oil and eggs with an electric mixer until creamy. Add the sugar and vanilla and beat well.
- Combine the flour salt, baking soda, and ground cinnamon together in a bowl. Slowly add this mixture to the egg mixture and mix until combined. The batter will be very thick. Fold in the apples by hand using a wooden spoon. Spread batter into the prepared pan.
- Bake at 350 degrees F (175 degrees C) for 45 minutes or until cake tests done. Let cake cool on a wire rack. Once cake is cool serve with a dusting of confectioners' sugar or with a Cream Cheese Frosting.

- Soak the raisins in the apple juice/cider for two hours or place them, with the juice/cider in the microwave for 2 minutes on high. Set aside.
- Preheat oven to 390 degrees F. Grease a casserole large enough to hold the apples, preferably with a little space between each apple.
- Wash your apple, cut off the upper portion for a lid. Generously core, leaving about 1/2 inch on the outside. Squeeze lemon juice over all cut portions, including the cut portion of the lid. Save any lemon left and squeeze over the apples after they’re filled.
- Mix together the drained raisins (reserve the soaking liquid). Cut off the upper part like a lid and core it generously. (Reserve some of the removed apple in case it’s needed for the filling.)
