Steps:
- Preheat the oven to 425 degrees F.
- Preheat a baking sheet in the hot oven for at least 5 minutes.
- While the baking sheet is heating, toss the potatoes with the olive oil and 3/4 teaspoon salt in a large bowl. Then dump the potatoes out onto a baking sheet, spreading to a single layer. Roast for 30 to 35 minutes, shaking the pan every now and then, until the potatoes are cooked through, brown and crispy. Toss the fries in a big bowl with the parsley and cheese.

- Arrange in a single layer on a baking sheet. Drizzle with oil, sprinkle with salt, pepper, and paprika.
- Bake until tender and golden crispy outside, about 40 minutes. When out of the oven, hit them with some dashes of steak spice.

- Preheat the oven to 450 degrees F.
- Leaving peel on, cut the potatoes into 6 lengthwise to make long wedges, about 3/4-inch to 1-inch wide. Combine the potatoes, oil, salt and cayenne on the baking sheet and toss to combine. (1 less bowl to wash) Arrange the potatoes on a baking sheet in a single layer, so a cut side is in contact with the pan, but evenly spaced so the potatoes aren't touching each other. Bake until golden brown and cooked through, about 30 minutes. Slip a spatula under the potatoes to turn them over and cook for 5 minutes more.
- Transfer potatoes to a serving dish and serve immediately.

- Preheat oven to 400 degrees. Oil two baking sheets with 1 tablespoon of olive oil each. Slice the potatoes into 1/2 inch wide by 1/4 inch thick fries. In a large. Bowl toss the potatoes with the remaining olive oil. Spread the potatoes out in a single layer on each baking sheet. Bake for 3040 minutes until golden brown. Flip the fries occasionally so that they brown evenly and do not stick. Season and serve.

- Adjust oven rack to lowest position; heat oven to 475 degrees Fahrenheit.
- Place potatoes in a large bowl and cover with hot tap water; soak 10 minutes.
- Meanwhile, coat 18 by 12 inch heavy duty rimmed baking sheet with 4 tablespoons oil and sprinkle evenly with about 3/4 teaspoon salt and 1/4 teaspoon pepper (this acts as ball bearings to help prevent potatoes from sticking so much). Set aside.
- Drain potatoes.
- Spread potatoes out on a triple layer of paper towels and thoroughly pat dry with additional paper towels.
- Rinse and wipe out now empty bowl; return potatoes to bowl and toss with remaining 1 tablespoon oil.
- Arrange potatoes in a single layer on prepared baking sheet; cover tightly with foil and bake 5 minutes.
- Remove foil and continue to bake until bottoms of potatoes are spotty golden brown, 15 to 20 minutes, rotating baking sheet after 10 minutes.
- Using metal spatula and tongs, scrape to loosen potatoes from pan, then flip each wedge, keeping potatoes in a single layer.
- Continue baking until fries are golden and crisp, 5 to 15 minutes longer, rotating pan as needed if fries are browning unevenly.
- Transfer fries to a second baking sheet lined with paper towels to drain.
- Season with additional salt and pepper to taste and serve.

- Place strips in a bowl and add cool water to cover the potatoes.
- Wash out some of the"starch" and then drain the potatoes well.
- Mix in the olive oil and sprinkle with salt.
- Mix all of the potatoes well so that they all get coated evenly.
- Spray a cookie sheet with PAM and then place the potatoes on top.
