CONCHIGLIE WITH GUANCIALE AND PEAS

- In a large skillet over medium-high heat, heat the olive oil. Then add the guanciale and cook until rendered, about 5 minutes. Add the garlic and cook for 6 minutes more, making sure that the meat does not get too crunchy and the garlic does not burn. If you see that the guanciale is browning too fast, remove it from the pan, finish the garlic and then add it again to the sauce.
- Bring a large pot of salted water to a boil, add the pasta and cook about 6 minutes. Add the peas after the 6 minutes and cook until the peas are bright green, about more 2 minutes. Remove the peas and pasta to the guanciale sauce and saute for another minute or two. Then add the Parmesan and toss for 1 minute. Drizzle with the extra-virgin olive oil and some pepper. Serve with a bottle of robust red wine.
CREAMY CONCHIGLIE PASTA SALAD
Made by creating a dressing of sorts, this is the old Southern way of making pasta salad. Using celery, red and green bell peppers, onion, salad cubes (sweet pickles) with a blend of mayo, seasonings, and vinegar, the pasta melds into a wonderfully creamy, cold side dish that's perfect for cookouts and family gatherings, as well as Sunday dinners.

- Bring a large pot of salted water to a boil. Add shells and cook, stirring occasionally, until tender yet firm to the bite, 8 to 9 minutes. Drain in a colander, rinse briefly with cold water, and drain again.
- Combine celery, red and green bell pepper, pickles, green onion, vinegar, 1/4 teaspoon seasoning salt, and pepper in a medium bowl; mix well. Fold in mayonnaise and sour cream until well blended. Taste and add additional seasoning salt if needed. Fold in pasta.
- Cover and refrigerator at least 4 hours, or overnight.
- Remove from the refrigerator. Fold in Cheddar cheese and serve.

- Bring a large pot of salted water to a boil. Add conchiglie and cook, stirring occasionally, until tender yet firm to the bite, 10 to 12 minutes.
- Meanwhile, bring a separate pot of water to a boil. Add corn and boil for 2 minutes. Remove and run under cold water to cool.
- Hold each cob upright in the base of a large serving bowl, and cut kernels off with a sharp knife.
- Drain pasta; add to the corn. Add tomatoes, olive oil, prosciutto, pesto, basil, and salt; toss thoroughly.
- Serve immediately (or refrigerate for up to 2 days), topped with Parmesan cheese.

- In a saucepan let the butter melt over a moderate flame. Add the flour a little at a time, stir carefully and make sure any lumps of flour dissolve until you have a smooth roux. Then pour in the milk a little at a time, continuing to stir until it starts to thicken. Add a pinch of salt. Continuing stirring until the béchamel is thick enough. If it gets too thick you can add more milk. Set aside and allow to cool.
- Put a pot of water on to boil for the pasta. Add salt once it starts to boil and bring to the boil again. Cook the pasta a little less than al dente, according to the instructions on the packet. When the pasta is ready, drain and rinse under cold running water so that it doesn’t continue cooking.
- Put the cooled (or ready made) béchamel in a bowl with the eggs and 1/3 of Parmigiano Reggiano/grana, add salt, pepper and mix with a whisk. Add the cooked pasta shells to the bowl and mix gently.

- Whether using fresh or frozen, cook the spinach as normal without adding any extra liquid. Drain the spinach making sure you have removed as much liquid as possible then, once it has cooled, chop it and mix it in a bowl with the ricotta, the eggs and the Parmigiano, adding nutmeg, salt and pepper as required.
- Put a pan of water on to boil for the pasta. Add salt when it starts to boil and bring to the boil again. Cook the conchiglioni a little less than the time required for al dente, then drain and let the pasta cool. (it’s better to separate the shells before they cool as they may stick together)
- Heat the olive oil in a frying pan or skillet, add the whole peeled garlic cloves and cook until they start to soften and brown. Add the tomato passata or the fresh peeled San Marzano tomatoes (I also like to use half passata and half unpeeled fresh cherry or datterini tomatoes). Let the sauce simmer for 15-20 minutes. Add salt and pepper to taste. Remove the garlic when the sauce is ready.
- Melt the butter in a saucepan, add the flour a little at a time, whilst stirring continuously, until you have a smooth paste. Add the milk a little at a time, again continuously stirring, until the sauce starts to thicken. If your béchamel seems lumpy you can use a hand blender to make it smoother. I like to add a pinch of nutmeg to the béchamel.
