CABBAGE CREOLE
This is a recipe that my mom has cooked for years. I never would eat this because I'm not too big on cabbage, but once I finally tried it, it became one of my favorite dishes!

Steps:
- In a large skillet, brown beef with chopped onion. Drain, if necessary. Return meat mixture to pan.
- Add chopped cabbage (this may have to be done in batches depending on how big of a pan you use). Cook until cabbage is somewhat wilted.
- Add Rotel and continue to cook until cabbage is tender.
- Add cubed Velveeta and seasonings to taste.
- Cook until cheese is melted. Serve hot.

Steps:
- Bring the water, with salt, to a boil in a saucepan. Add the rice and stir well. Bring back to a boil and simmer for about 15 minutes, stirring occasionally.
- Drain the rice well. Add the butter, lemon juice, Tabasco, ground pepper and parsley. Blend well and serve.

CREOLE RICE, SAUSAGE, AND CABBAGE SOUP
I had some leftovers from Recipe#410327, which were leftovers from Recipe#126488 By Chef#145352. So,I came up with what I think is a very good soup. Please remember to use the mentioned recipes to get the exact taste that I reached. I served this with a grilled cheese sandwich on the side. Shredded cheese and croutons are optional. Steps:
- Combine soup and water in a medium sauce pan.
- Heat over medium heat.
- While soup is heating, cut cabbage rolls into bite size pieces and add to soup.
- Stir until cabbage roll mixture is heated through.
- Pour into bowls, and top with optional cheese and croutons.

I had leftovers from Recipe#126488 By Chef#145352. And I really just didn't want to reheat it and eat. So, these cabbage rolls were invented. Steps:
- Preheat oven to 350.
- Mix together rice mixture and cheese, set aside.
- Spray an 11 x 9 inch baking dish with cooking spray.
- Divide rice/cheese mixture evenly between cooked cabbage leaves, roll cabbage leaves tight so mixture doesn't come out.
- Place each roll seam side down in prepared dish, and pour sauce evenly over rolls.
- Bake for 25 minutes or until heated through.
- Carefully remove rolls to serving plate, and pour remaining sauce over rolls.

- Chop the onion and green pepper. Slice the cabbage.
- In a large pan, brown the gound beef with the onions and peppers. Drain and remove from pan.
- Put the sliced cabbage in the pan; add the Rotel tomatoes. Cook on medium heat until cabbage is tender.
- Add the meat mixture to the cabbage and stir well. Stir in the cheese soup until well blended. Cover and cook over low hear for at least 1 hour. Add salt and pepper to taste.
RED CABBAGE AND BLACK RICE, GREEK STYLE
If I were making an authentic Greek version of this dish it would be named "cabbage rice" and would call for twice as much olive oil, regular long-grain rice but probably not basmati, and green cabbage. What I had on hand in my kitchen was purple cabbage, and I thought I would go all the way with those purple flavonoids and cook the purple cabbage with black rice, using the same formula the Greeks use for their comforting Lenten meals. With all of my recipes this week I will be focusing my attention on simple Greek Lenten vegetable and rice or bulgur dishes (Eastern Orthodox Lent begins Feb. 23), inspired by recipes in Diane Kochilas's book "Ikaria: Lessons on Food, Life, and Longevity From the Greek Island Where People Forget to Die."

- Heat 3 tablespoons olive oil over medium heat in a deep, lidded skillet or a wide, lidded saucepan. Add onion and cook, stirring often, until tender, about 5 minutes. Add garlic and stir until fragrant, about 30 seconds. Stir in cabbage, add a generous pinch of salt, and cook, stirring, until cabbage has wilted and softened, about 8 minutes. Stir in rice and stir to coat with olive oil.
- Add water, salt, pepper, parsley and dill and bring to a boil. Reduce heat to low, cover and simmer 35 to 40 minutes, until rice is cooked through and the liquid just about absorbed. Remove from heat, uncover and place a towel across the top of the pan. Return the lid and let sit for 10 minutes. Serve hot, with remaining olive oil drizzled over the top.
