RICH-N-CREAMY BANANA PUDDING
Goodness! We made this for a friend's birthday... and folks have been asking us about it ever since! Not only did the Southern birthday boy give it a thumbs-up, but so did every single party guest. Yum!

Steps:
- 1. Combine the pudding with the milk and mix together for approximately 2 minutes.
- 2. Gradually fold in the sweetened condensed milk.
- 3. Gradually fold in the whipped topping.
- 4. Slice bananas into 1/4 inch thickness.
- 5. Layer a 9 x 13 dish with the vanilla wafers; then the pudding mixture; and then the banana slices. Then repeat for the 2nd layer. You can crush up the remaining vanilla wafers and scatter on the top if you like.
- 6. Let refrigerate for several hours. Overnite is better, but I have made this early in the morning for a pot-luck at work, and it's great at lunch.

Rich and yummy! Very important, Be sure to use 1 CUP of Cool Whip for the pudding and the rest for the topping!!

- In a mixing bowl, put condensed milk and water.
- Add pudding and mix with mixer until blended.
- Put in refrigerator for 5 minutes.
- Add 1 CUP Cool Whip to mixture and mix with mixer.
- Put vanilla wafers in dish, pudding next, sliced bananas and repeat.
- Top with Cool Whip.

There are several like this one, but my MIL has made this for years, and it is a real hit for our family. It is also about as rich as we would ever want. It came from the First United Methodist Church of Euless, Texas, cookbook.

Steps:
- Prepare pudding according to package directions, using 3 cups of milk. Add sweetened condensed milk and fold in whipped topping.
- Line bottom and sides of a 9X13 inch dish with vanilla wafers. Cover wafers completely with sliced bananas. Overlap them a bit.
- Pour prepared pudding mixture over wafers and bananas. Chill and serve.
- If desired, layers can be made.

- In the bowl of a stand mixer, add in the heavy whipping cream, confectioners' sugar and vanilla extract and, using the whisk attachment, whip until stiff peaks form, about 5-7 minutes. Remove the whipped cream to a separate medium bowl and set aside.
- To the wiped out stand mixer bowl, add the cream cheese and, using the same whisk attachment, whip the cream cheese until fluffy, about 30 seconds. Add in the sweetened condensed milk and beat until smooth and no lumps of cream cheese remain, stopping to scrape the bottom and sides of the bowl as needed. Add in the dry pudding mix and mix well, then slowly stream in the milk and mix until fully combined.
- Add 2/3 of the whipped cream to the pudding mixture and fold it in gently until fully combined and no whipped cream streaks remain. Set aside.
