Steps:
- In a heavy saucepan on low heat, melt chocolates, cream, and butter, stirring occasionally.
- After the mixture has melted, stir in the Drambuie.
- Pour into a small bowl; cool.
- Refrigerate 2 hours, until mixture hardens.
- Using a melon baller, quickly form chocolate mixture into ¾ balls.
- Refrigerate until cold and then roll balls in cocoa powder.
- Store in an airtight container.
RICH CHOCOLATE TRUFFLES
I made these one year and gave them as Christmas gifts. They were the most popular presents I ever gave! I can't remember yield and times exactly now so they are a guess with cook time being chill time.

Steps:
- In saucepan, combine whipping cream & butter.
- Cook over medium heat, stirring constantly, just until mixture boils; remove from heat. Stir in chocolates until melted; continue stirring until mixture cools & thickens slightly.
- Stir in vanilla.
- Pour into shallow glass dish.
- Cover; chill until firm.
- With spoon scoop mixture into 1 inch balls.
- Coating Melt chocolate & shortening over low heat; stirring constantly.
- (use 1 Tbsp of shortening for every 6 oz. of chocolate).
- When mixture is smooth remove from heat. Dip each truffle into coating.
- (I found dr opping them in the chocolate & then fishing them out with a spoon worked best. But work quickly or they will melt) Then either place them on foil or in foil candy papers & allow to harden.
- Mix powdered sugar & milk.
- Drizzle over truffles in various designs.
SCOTTISH CHOCOLATE SHORTBREAD TRUFFLES
A melt in your mouth mixture of dark chocolate,Scottish shortbread,and whisky, this is the easiest truffle recipe I've ever made...the Drambuie is subtle so if you prefer a strong taste of it, double the measurement.Chocolate should be 55-70% cocoa solids. This recipe is from "Scot's Cooking" by Sue Lawrence.

Steps:
- Melt chocolate and butter together over low heat, then stir in the shortbread crumbs and Drambuie until mixed thoroughly.
- Transfer to a shallow bowl and leave to cool,then chill for a couple of hours to firm up.
- Spoon out some of the mixture and shape it into balls with the palms of your hands, at first the mixture will be stiff,but it softens quickly in your hands.
- Roll each ball in Cocoa powder and set aside until all have been dusted.
- The truffles will keep for several days in an airtight tin.

SCOTTISH TRIFLE
Steps:
- Make the sponge roll:
- In a large bowl with an electric mixer beat the eggs, the sugar, and the vanilla until the mixture is thick and pale. Sift the flour and the baking powder over the egg mixture and fold them in gently but thoroughly. Line the bottom of a baking pan, 13 by 9 by 2 inches, with parchment paper, spread the batter in the pan, and bake the cake in a preheated 400°F. oven for 8 minutes, or until it is puffed and golden. Invert the cake onto a lightly sugared kitchen towel. In a small saucepan melt the jam over low heat, stir in the kirsch, and spread the surface of the cake with the jam mixture. Starting with a long side and using the towel as guide, roll the cake up jelly-roll fashion and sprinkle it with the Sherry. Wrap the sponge roll firmly in the towel, let it cool, and cut it into 3/4-inch slices.
- Make the custard:
- In a bowl set over a saucepan of simmering water beat the yolks and the sugar with the electric mixer until the mixture is thick and pale. Remove the bowl from the pan and stir in gradually the milk, the cream, and the vanilla. Cook the custard in the bowl set over the pan of simmering water over moderately low heat, stirring, until it registers 170°F. on a candy thermometer. Transfer the custard to a metal bowl and whisk in the crème fraîche and the Sherry. Set the bowl in a larger bowl of ice and cold water, whisk the custard until it is cool, and chill it, its surface covered with plastic wrap, until it is cold.
- To assemble the trifle:
- In the bottom of a 2 1/2-quart straight-sided glass bowl scatter half the amaretti crumbs, top them with half the sponge roll slices, and top the sponge roll slices with the remaining amaretti crumbs. Sprinkle the Sherry over the remaining sponge roll slices, line the side of the bowl with the slices, and pour in the custard, spreading it to let it seep down around the side and bottom. Chill the trifle for at least 2 hours and up to 24 hours. Just before serving, in a bowl with the electric mixer beat the cream until it is stiff, transfer it to a pastry bag fitted with a decorative tip, and pipe rosettes around the edge and in the center of the trifle.
- Sprinkle the pistachios over the trifle and garnish the rosettes with the citron and small drops of the jam.
DARK CHOCOLATE TRUFFLES
These rich dark chocolate truffles are as good as anything you'd get from a chocolatier. Even more amazing? They're vegan.

- Heat chocolate, oil, and 3 tablespoons water in a double boiler, stirring, until just melted. Remove from heat and stir in vanilla and sea salt.
- Transfer to an 8-inch baking dish and refrigerate until mixture is set but still pliable, about 2 hours.
- Using a 1-inch scoop or melon baller, scoop out chocolate mixture and transfer to a parchment-lined baking sheet. Coat hands in cocoa and roll chocolate into balls. Refrigerate on parchment-lined baking sheet 10 minutes.
