Fried Cornbread (AKA Hoe Cakes) image

Steps:

  • 1. Mix together flour, corn meal, and sugar into a mixing bowl. Add egg, oil and buttermilk. Mix with fork until all ingredients are moistened. Batter should be the consistency of pancake batter, so you may need to add a little more milk.
  • 2. Heat oil in heavy skillet (I use cast iron). When oil is hot, add a little less than 1/4 cup of batter to the hot oil. Fry on medium heat for about 2-3 minutes. When golden brown, turn and cook other side until golden. Remove from pan and drain on paper towels. Serve with butter, honey butter or whatever you like.

1/2 c self-rising flour
1/2 c self-rising corn meal (not mix)
1 to 2 tsp sugar
1 large egg, lightly beaten
2 Tbsp oil or melted bacon grease
3/4 to 1 c buttermilk (you may also use sweet milk)
oil for frying

Legend has it that these were first made on the blades of weeding hoes.Serve these white cornmeal cakes flecked with green onion with any fried entree, grilled meats or barbeque. From a September 1986 issue of Bon Appetit magazine in the R.S.V.P. section. The recipe was requested from the Riverhouse Restaurant and Oyster Bar in Tarpon Springs, Florida. *If self-rising white cornmeal is unavailable, substitute 2 cups regular white cornmeal mixed with 2 teaspoons baking powder.*

Steps:

  • Combine cornmeal,green onions,flour,sugar and salt in large bowl; gradually add milk and stir until smooth.
  • Heat 1/4 inch oil in large skillet over medium-high heat.
  • Drop batter by tablespoons into oil, flattening to thickness of 1/2 inch (in batches; do not crowd), and fry until crisp and golden brown, about 2 minutes per side.
  • Remove using slotted spatula and drain on paper towels.
  • Serve hot.

Steps:

  • In a medium size bowl, stir together the cornmeal, baking powder, salt, sugar and green onion.
  • Add the egg, buttermilk and melted butter; whisking to combine.
  • Preheat a griddle until drops of water sizzles when sprinkled on the griddle; lightly oil with canola oil.
  • Pour approximately 1/4 cup of batter onto preheated griddle and allow to form into 2 inch circles.
  • Cook the hoecakes until bubbles form, turn and continue cooking until cooked through.
  • Place on a warmed serving platter; serve hot.

Steps:

  • Mix 4 cups of cornmeal with yeast and enough warm water to make a smooth but thick batter.
  • Let rest overnight on counter or stovetop.
  • Next morning, slowly add the rest of the cornmeal, plus the egg and again, enough warm water to make it a thick smooth batter.
  • Heat the griddle and shortening.
  • Stir each time before you pour spoonfuls of batter onto hot griddle.
  • Make SMALL pancakes and serve with butter and honey on the side.

Put the buttermilk and the onion in a blender and puree till it’s a homogenous liquid. Pour that plus 1/2 cup of the water into the cornmeal mixture and whisk to combine.
  • You’re looking for something akin to slightly loose pancake batter — a batter that, when you drop it into the skillet, spreads on its own, bubbles up around the edges, splatters a little. If you need to add more water to accomplish this, add the remaining water increments.
  • Heat 1 tablespoon of the oil in a 10-inch cast-iron skillet over medium heat. Spoon 2 tablespoons of batter onto the edge of the pan to form 1 corn cake. If the batter sizzles a little, the pan’s ready. Continue to drop the batter around the perimeter of the pan, finishing off with one in the middle. Make sure you get as many of them in there as you can without letting them touch. Lower your heat slightly and cook on one side for about 3 minutes. When they’re brown on the cast-iron side and little bubbles are shooting up through the center of batter, flip and cook an additional 3 minutes. Transfer the browned hoecakes to a baking sheet and hold them in the oven till you’re ready to eat. Add another tablespoon of oil and continue with the next batch.
  • If you, like my grandma, want to make these ahead and serve them a few hours later, warm them in a 375°F oven for 12-15 minutes. Do not use a microwave. The results will disappoint.
