Moroccan Seasoned Chicken With Pine Nut Couscous image

Steps:

  • In a large bowl, combine paprika, turmeric, coriander, cumin and cinnamon; add chicken and toss.
  • In a large skillet, heat oil over medium high heat and cook chicken until browned, about 3 to 4 minutes.
  • Add onion, garlic and lemon slices; season with salt and pepper.
  • Cook, stirring frequently, until the onion is softened, about 6 minutes.
  • Add 1 cup chicken stock, olives, and lemon juice; scrape brown bits from bottom of pan, remove from heat, and season with salt and pepper.
  • Heat the remaining chicken stock and butter in a medium saucepan until boiling; stir in couscous, cover, and turn off the heat; let stand 5 minutes.
  • Fluff couscous with a fork and stir in pine nuts.
  • Serve the chicken and sauce over the couscous and sprinkle with parsley.

Steps:

  • Melt the butter in a large saucepan. Add the shallots and cook them over medium-low heat for 3 minutes, until translucent. Add the chicken stock, salt, and pepper and bring to a boil. Turn off the heat. Stir in the couscous, cover the pan, and set aside for 10 minutes. Add the pine nuts, currants, and parsley and fluff with a fork to combine. Serve hot.

4 tablespoons (1/2 stick) unsalted butter
3/4 cup chopped shallots (3 to 4 shallots)

Grilled Moroccan Spiced Chicken Breasts Stuffed with Couscous and Pine Nuts image

Steps:

  • In small bowl, place couscous; set aside.
  • In 1-quart saucepan, heat broth, butter, coriander, 1/2 teaspoon cumin, 1/4 teaspoon salt and the turmeric to boiling.
  • Pour hot broth over couscous, stir well and cover with foil. Let stand 5 minutes to allow liquid to be absorbed. Uncover and fluff couscous with fork. Stir in lemon peel, lemon juice, cranberries, pine nuts and pepper sauce; set aside.
  • Meanwhile, place 1 chicken breast on work surface. Notice it has a thick end and a thin end. To create a pocket for the stuffing, insert long, thin knife (a boning knife is ideal) into middle of thick end, parallel to work surface. Slide knife in until it reaches middle of chicken. Move knife up and down within the chicken to form a pocket. You want to have a smaller opening where knife entered the chicken and a larger pocket within the chicken to stuff with couscous mixture. Repeat with remaining chicken breasts.
  • Spray grill rack with cooking spray or brush with oil. Heat coals or gas grill for medium heat. (Check the temperature of the coals by placing your hand, palm side down, near but not touching the cooking grill rack. If you can keep your hand there for two seconds [one-thousand one, one-thousand two], the temperature is high; three seconds is medium-high; four seconds is medium; five seconds is low.)
  • Use one hand to hold chicken with thick end up. With other hand, stuff 1/4 cup of the couscous into pocket. Repeat with remaining chicken. Brush chicken with oil.
  • In small bowl, mix 1/2 teaspoon salt, 1/2 teaspoon cumin and the pepper. Sprinkle mixture evenly over chicken breasts.
  • Grill chicken covered 15 to 20 minutes, turning occasionally, until juice of chicken is no longer pink when center of thickest part is cut (170°F) and stuffing is hot. To serve, slice each breast and layer on plate so stuffing is visible.

Roast Chicken with Couscous Stuffing image

Steps:

  • 1. To prepare the stuffing, in a small sauce pan, combine the stock and 1 Tbsp oil. Bring to a boil over moderately high heat and stir in the couscous. Remove the pan from the heat and let stand, covered for 10 minutes.
  • 2. Meanwhile, take the remaining Tbsp. of oil and the onion, garlic and parsley and saute over moderate heat until translucent. Mix with the couscous.
  • 3. Stuff the couscous into the cavity of the chicken and wrap tightly with aluminum foil.
  • 4. Place in oven covered at 375 degrees for about 20 minutes a pound, then uncover chicken while leaving the couscous covered with foil and bake an additional 20 to 30 minutes until skin is nicely browned and crisp.

1 broiler/fryer whole chicken
STUFFING
1 1/2 c chicken stock
2 Tbsp olive oil
1 c couscous
1 medium onion, chopped
2 clove garlic, minced
1/4 tsp salt

Whole chickens are so easy to make and really look impressive on the dinner table. This recipe creates a well-seasoned and juicy chicken with a wonderfully flavorful stuffing. I have made this recipe a number of times over the years and have always had outstanding results and raves. I found the recipe in 365 Ways to Cook Chicken. Sometimes I add cooking wine to the water that the rice cooks in.... otherwise I really don't need to change a thing. --Note-- This Chicken makes an Outstanding Chicken Salad for sandwiches the next day. Simply mix the left over chicken and stuffing with mayonnaise. It is hard to get the chicken salad onto the bread without eating it all before hand!

  • Preheat oven to 375; Rinse Chicken and pat dry; Season inside and out with ½ Teaspoon Salt and ¼ Teaspoon Pepper: Coarsely Chop Giblets.

  • Preheat the oven to 180°C/fan160°C/gas 4. Pat the chickens dry with kitchen paper and place them side by side in a large roasting tin.
  • Heat half the butter in a large saucepan, add the shallots and cook gently for 4-5 minutes, until tender. Stir in the garlic, spices and chilli, and cook for a further minute. Stir through the couscous and toss well until coated in the buttery spice mix. Pour over the stock and add the cherries and apricots. Turn off the heat, cover, and stand for 10 minutes until the liquid has been absorbed.
