Spanish-style slow-cooked lamb shoulder & beans image

Steps:

  • To make the spice mix, combine all of the ingredients together with a large pinch of salt. Slash the lamb shoulder all over with a sharp knife and rub in. If you have the time, marinate for up to 24 hrs, but this is not essential.
  • Heat the oven to 150C/130C fan/gas 2. Heat the oil in a large flameproof casserole dish or roasting tin over a medium-high heat, add the onions, carrots and garlic and sizzle for 5 mins until the onions and carrots are softened. Pour over the stock, then bring to the boil. Nestle the lamb in the pan and cover, then transfer to the oven and roast for 2 hrs.
  • Uncover and transfer the lamb to a plate using tongs. Stir the beans, peppers and olives through the stock in the pan, sit the lamb back on top and return to the oven, uncovered, for 1 hr 30 mins until the lamb is cooked through. Transfer the lamb to a board and shred using two forks. Stir the parsley through the braised beans before serving.

Mediterranean Roasted Leg of Lamb With Red Wine Sauce image

Steps:

  • Preheat oven to 400°F.
  • Unroll roast; trim fat.
  • Spread minced rosemary, 1/4 teaspoon salt, and garlic into folds of the roast.
  • Reroll roast; secure at 3-inch intervals with heavy string.
  • Sprinkle with 1/4 teaspoon salt and pepper.
  • Drizzle with oil.
  • Secure rosemary sprigs under strings on roast.
  • Place roast on the rack of a broiler pan or roasting pan; insert meat thermometer into thickest portion of roast.
  • Bake at 400° for 1 hour.
  • Increase oven temperature to 425° (do not remove roast from oven).
  • Bake an additional 20 minutes or until thermometer registers 140° (medium-rare) to 155° (medium).
  • Place roast on a platter; cover with foil.
  • Let stand 10 minutes for roast to reabsorb juices.
  • (Temperature of roast will increase 5° upon standing.)
  • Remove string and rosemary sprigs before slicing.
  • Remove rack from pan.
  • Combine 1/2 cup wine and cornstarch; set aside.
  • Add 1/2 cup wine to drippings in pan; scrape pan to loosen browned bits.
  • Combine drippings mixture and 1 cup wine in a saucepan; bring to a boil.
  • Cook 5 minutes.
  • Add 1/4 teaspoon salt and cornstarch mixture; return to a boil.
  • Cook 1 minute or until thick, stirring constantly.
  • Serve with lamb.

Breton braised lamb & haricot beans image

Steps:

  • Put the beans in a saucepan and cover with water. Add the quartered onion, the halved carrot and halved celery, the bay leaves, parsley stalks and peppercorns. Bring to the boil, reduce the heat and simmer for 30-40 mins until the beans are soft. Drain well and reserve the cooking liquid, discarding the onion, carrot and celery.
  • While the beans are cooking, heat half the olive oil in a heavy-based flameproof casserole. Brown the lamb in batches over a high heat. As each batch is cooked, remove it and set aside on a plate. Reduce the heat, add the chopped onion to the pan with the diced celery and carrot and cook until well coloured. Add the garlic and cook for another couple of mins.
  • Return the lamb to the pan and add all the remaining ingredients, except the beans. Bring to the boil, reduce the heat to very low and cover, then cook for 2 hrs. Add the beans 45 mins before the end of cooking time. Stir the lamb round every so often. If the lamb looks dry, add some of the bean cooking liquid.
  • Remove the lid for the last 30 mins of cooking time, and season. This helps the cooking liquid to reduce. You should end up with a thick stew of tender lamb and soft beans. Scatter over the parsley and serve.

Steps:

  • Preheat the oven to 350 degrees.
  • Rinse the lamb chunks under cold running water, and pat dry with paper towels.
  • In a casserole or roasting pan large enough to hold all pieces of lamb, heat olive oil over medium-high to high heat. When oil is almost smoking, add lamb chunks and brown quickly, turning frequently, for about 10 to 15 minutes.
  • Coarsely chop 2 of the garlic cloves; add to lamb as it browns. When all the lamb is browned, add salt and abundant pepper. Sprinkle flour over lamb pieces, and turn them to mix in seasoning and salt. Add wine; as soon as it starts to bubble, cover pan and place in oven to roast, covered, for 30 minutes.
  • While lamb is roasting, coarsely chop remaining garlic, and using a mortar and pestle, pound it with chopped rosemary into a coarse paste. Add chopped anchovies, and continue pounding to make a fairly smooth paste. A tablespoon at a time, mix in wine vinegar to make a smooth emulsion.
  • When lamb has roasted for 30 minutes, remove from oven, and pour vinegar emulsion over lamb pieces. Turn them to coat well with sauce. Return to oven, uncovered, to roast an additional 30 minutes.
  • When lamb is done, with no trace of red in the meat, remove from oven, set aside for 5 minutes, then put lamb on a heated serving platter. Bring pan juices to a boil and cook rapidly for about 45 seconds, or just long enough to reduce juices and thicken them slightly. Add salt and pepper to taste. Pour juices over lamb chunks; serve immediately.

  • Preheat the oven to maximum temperature. Debone the lamb. Cut the bones into pieces or ask your butcher to do this. Put the meat into a baking dish, cover with white wine and a few sprigs of thyme and let marinate for at least 2 hours. Put the bones into a baking dish and roast for around 40-45 minutes. Remove from the oven and reduce the oven temperature to 400°F.
  • Cut the celery, small carrot and onion into 1/4" cubes. Put in a saucepan with 1 sprig rosemary, 1 sprig thyme, the garlic clove, 2 bay leaves and 3 Tbsp. oil; cook for 2-3 minutes. Add the roasted bones and stir for 3 minutes. Add 1 cup wine and water until the bones are nearly covered. Simmer, covered, for around 30 minutes, reducing the liquid by half. Strain the broth.
  • Remove lamb from marinade and pat dry with paper towels. Place on a work surface, spread flat, with the side that was next to the bone facing up.
  • Sprinkle them with a little crushed rosemary, salt and pepper; spread a thin layer of ricotta over the meat to give flavor as it cooks. Fold the two pieces of meat together with the seasoned side inside. Press lamb with your hands to shape it like a roast and tie with kitchen twine. Sprinkle with salt and pepper. Brown in an oven-safe pot with 1-2 Tbsp. oil for 2-3 minutes. Cover with broth and bake for around 1 hour and 30 minutes.
