ROAST SPATCHCOCK CHICKEN WITH LEMONGRASS, HONEY & FISH SAUCE

Roast spatchcock chicken with lemongrass, honey & fish sauce image

Steps:

  • To spatchcock the chicken, put the bird on the worktop, breast-side down, with the legs pointing towards you. Using good kitchen scissors, cut through the flesh and bone along both sides of the backbone (and either side of the parson's nose). Remove the backbone and keep it for stock (freeze until you've gathered a few). Turn over the chicken, then flatten it by pressing hard on the breastbone with the heel of your hand - you'll feel it breaking and flattening under your hand. Remove any big globules of fat and neaten any ragged bits of skin.
  • To make the marinade, remove and discard the coarse outer layer of leaves and the green tips from the lemongrass. Chop the pale inner core finely, then pound using a pestle and mortar with the garlic, ginger and chillis. Transfer to a bowl, then add the rest of the ingredients. Put the chicken in a dish that will fit in your fridge. Gently loosen the skin on the breast, then work your fingers in between the skin and the flesh, including the legs. Spoon some of the marinade under the skin, then spread more marinade all over the chicken (use no more than half the marinade in total at this point). Cover the bird with cling film and chill in the fridge for a few hours, or overnight.
  • Heat oven to 180C/160C fan/gas 4. Put the chicken, breast-side up, in a roasting-tin in which it fits snugly (if there's too much room around the bird, the marinade will burn). Scrape all the marinade from the dish over the bird. Season all over, then roast for 1 hr 10 mins. Baste after 15 mins with all the juices from the tin. Baste again after 30 mins, then cover with foil (if the chicken isn't very brown, don't cover with foil yet - keep checking until it is brown, then cover). After 50 mins, spoon over the remaining marinade, cover with foil again and cook for the final 20 mins.
  • To check that the chicken is cooked through, pierce the bird between the leg and the rest of the body - the juices should be clear. Cut into portions, then serve with rice and stir-fried green veg.

Spatchcock Roast Chicken with Schmaltzy Potatoes and Green Goddess Sauce image

Steps:

  • Locate the backbone of the chicken and cut all the way through the bird along both sides of the backbone. Save the bone for stock. Turn the chicken over and press down firmly to crack the keel bone. Your chicken is now spatchcocked and will lay flat.
  • Sprinkle salt all over the chicken from 8 inches above the bird. That ensures the salt falls evenly over the chicken. Place on a baking sheet or a baking pan and refrigerate, uncovered, for at least 12 hours and up to 36 hours.
  • When the chicken is ready, preheat the oven to 450 degrees F. Toss the potatoes with 1 tablespoon olive oil, salt and pepper and place on a sheet tray. Place the chicken over the bed of potatoes, breast-side up and wings tucked under, then brush with olive oil.
  • Roast for 10 minutes, then turn the oven down to 400 degrees F and roast until the internal temperature of the chicken reaches 165 degrees F, about 40 minutes more. You can make the Green Goddess Sauce now.
  • When the chicken is fully cooked, place it on a cutting board to rest for 10 minutes before slicing. While waiting for the chicken, put the potatoes back in the oven at 450 degrees F and roast until crispy, another 10 to 15 minutes.
  • To serve, slice the chicken breasts off the bone and slice each breast at an angle into 1-inch slices. Remove the wings and leg quarters and separate the thigh from the drumstick. The remaining carcass can be saved and frozen to make chicken stock. Serve the chicken with the schmaltz potatoes and Green Goddess Sauce.
  • Soak the cashews in hot water for 10 minutes. Drain, then add the soaked cashews, 6 tablespoons water, the lemon juice, olive oil, horseradish, maple syrup, garlic and 1/4 teaspoon salt to a high-speed blender. Blend until the mixture is smooth. Add the cilantro, parsley, tarragon, dill and green onion and blend until all the herbs are fully incorporated. The sauce can be stored in the fridge for 2 to 3 days. If it becomes thick, thin with water as needed.

ROASTED CHICKEN WITH FISH-SAUCE BUTTER

Roasting chicken thighs in a hot oven is a hands-off way to achieve two of life's greatest pleasures: crispy skin and golden schmaltz. And you want that chicken fat because it will crisp hand-torn bread into croutons. This meal is made even more lovely thanks to a bold but balanced fish-sauce butter that you whip up on the stovetop while the rest of the meal takes care of itself in the oven. Be sure to start with cold butter; the gradual melting of the fat helps thicken the sauce without breaking it.

Roasted Chicken With Fish-Sauce Butter image

Steps:

  • Heat oven to 450 degrees. Pat the chicken dry with paper towels and season lightly with salt and pepper. (The fish-sauce butter is plenty salty, so don't overdo the salt here.) Arrange the chicken skin-side up on a sheet pan and drizzle the oil over the chicken skin, coating it evenly. Roast until the chicken is light gold and the sheet pan is pooling with hot, rendered chicken fat, about 25 minutes.
  • Take the sheet pan out of the oven, scatter the bread around the chicken and toss gently to coat in the chicken fat. Place the pan back in the oven and roast until the chicken is golden, crispy and sizzling (you'll hear it), about 15 minutes.
  • While the chicken roasts, combine the brown sugar, fish sauce and lemon juice in a small saucepan and bring to a simmer over medium heat. Cook, occasionally swirling the pan or stirring the sauce with a wooden spoon, until bubbling vigorously and the mixture has reduced by about half, 2 to 3 minutes. This part is fun: Turn off the heat and add the butter, constantly swirling the pan or stirring with a wooden spoon, until all of the butter has melted and incorporated into the fish sauce mixture.
  • To serve, scatter the cilantro all over the chicken and bread and spoon some of the fish-sauce butter over each chicken thigh, reserving some to add to each plate for dipping the chicken and croutons while eating (which is divine).

4 bone-in, skin-on chicken thighs (about 2 pounds)

Steps:

  • Preheat oven to 425 degrees. Place chicken, breast side down, on a work surface. Starting at thigh end, cut along 1 side of backbone with kitchen shears. Turn chicken around; cut along other side. Discard backbone or save for stock. Flip chicken, and open it like a book. Press firmly on breastbone to flatten.
  • Rub chicken with 1 tablespoon oil, and season with 1 tablespoon salt and 1/2 teaspoon pepper. Brush 1 tablespoon oil in the center of a rimmed baking sheet slightly larger than the size of the chicken, and place half the lemon slices in a single layer on top of oil. Place chicken, skin side up, on lemons. Beginning at the neck end of breast, carefully loosen skin from flesh of breast and thighs with your fingers. Slide remaining lemon slices under skin in a single layer.
  • Roast chicken 20 minutes. Toss shallots with remaining teaspoon oil, and scatter around chicken. Continue to roast chicken until a thermometer inserted into thickest part of breast reaches 165 degrees, 25 to 30 minutes more.
  • Transfer chicken to a carving board, and let rest 10 minutes. Cut chicken into 8 pieces, and serve with roasted lemons, shallots, and pan juices. If using chicken for soup and salad, let chicken cool completely. Remove and discard skin, lemon under skin, and bones, and shred meat into bite-size pieces. Chicken, roasted lemons, shallots, and pan juices can be refrigerated up to 2 days. Store meat and pan juices in separate containers; lemons and shallots can be stored together.
