ROASTED ALMONDS

Steps:
- Preheat oven to 325°F.
- Toss all ingredients together in a large bowl.
- Line a baking sheet with parchment paper or foil.
- Roast almond mixture until lightly toasted and skins are just beginning to split (about 20 minutes).
- Let cool.
SIMPLE ROASTED ALMONDS
I found this recipe at www.nutsforalmonds.com. My huband loves almonds but the already roasted pre-package variety are by far too salty for him. And the Smoked ones he does not care for the flavor. So thus started my hunt for the below recipe.

Steps:
- Preheat the oven to 325 degrees F (165 degrees C).
- Bring a saucepan three-fourths full of water to a boil over high heat, add the almonds and boil for 30 seconds Drain, then immediately wrap the almonds in a kitchen towel and rub them in the towel to loosen the skins Pinch the almonds from the skins; the almonds should slip out easily This step is optional and can be skipped.
- Transfer the almonds to a heavy rimmed baking sheet.
- Add the oil and toss to coat evenly.
- Add the salt and toss again.
- Place in the oven and toast, stirring the almonds once or twice so they brown evenly (about every 5 minutes), until golden brown and fragrant, 20 to 30 minutes.
- Transfer to paper towels to cool completely, about 1 hour, before serving.
- Adjustments: Omit oil and salt and toast as directed above for plain roasted almonds.
- Be sure to purchase fresh almonds and not almonds that are"smoked" or"salted"- those are generally already roasted.
- Total time is listed as 1 hour 30 minutes, with the"cooking" time as time allowed for almonds to cool completely.

THYME-ROASTED MARCONA ALMONDS

Steps:
- Preheat the oven to 350 degrees F.
- Place the almonds, olive oil, thyme and kosher salt on a sheet pan and toss them together. Roast the almonds for 10 to 15 minutes, turning them every 5 minutes with a metal spatula, until they're lightly browned. Watch them carefully; they go from underbaked to burnt very quickly.
- Sprinkle with fleur de sel, toss and set aside to cool. Serve warm or at room temperature. (Store the cooled nuts in a sealed container at room temperature for a week or two.)
ROASTED ALMONDS IN CHILE OIL
Steps:
- Preheat the oven to 375 degrees F.
- Heat the oil in a large ovenproof skillet over medium flame for a couple of minutes to get it nice and hot. Add the chile and allow it to infuse into the oil for 1 minute. Add the almonds, cook and stir for 2 minutes until the almonds are completely coated in the chili oil. Put the pan (and almonds) in the oven and roast for 15 minutes until the nuts are toasty and fragrant. Remove the almonds from the oil to a plate lined with paper towels and sprinkle with salt.
ROASTED ALMONDS IN SKINS
Almonds are brined without removing the skin, dried in a towel, lightly oiled, slow-roasted and finally fast-roasted to a delicious finish. The compliments that are heard from your guests will be only raves. Make at least six pounds (3 batches) when you decide to try them. This recipe developed over the years in our family. All the kids ask for almonds in packages that are mailed to them. They keep coming back for more,

Steps:
- Place salt in a large bowl that will hold 8 cups.
- Add boiling water to the bowl and stir well.
- Add almonds to the brine.
- Let steep for 1/2 hour.
- Drain the nuts with a colander.
- Pour nuts onto a large towel and dry with a second towel patting them thoroughly dry.
- Transfer nuts to a large bowl.
- Drizzle with canola oil and stir to make all nuts have a shine but not too much oil on any one.
- Distribute the nuts on 2 large baking pans.
- Slow roast for ½ hour at 200 degrees F then stir.
- Slow roast for ½ hour at 200 degrees F then stir.
- Raise temperature in the oven to 300 degrees F.
- Roast for 15 minutes and let cool to room temperature.

MAPLE ROASTED ALMONDS

Steps:
- Preheat oven to 350 F.
- Toss almonds with maple syrup and salt.
- Add oil last, and toss to coat.
- Spread coated almonds on baking sheet lined with parchmment paper.
- Bake until roasted and syrup has thickened, stirring occasionally, about 20 minutes.
- Be careful not to let them burn, which can easily happen with maple syrup.
- Let cool on pan.
- Break apart any clumps while still a bit warm or the sugar will crack off.
- When completely cool, store in airtight container at room temp.
- Keeps 1 month.

- Stir together ground chipotle , sugar and salt in a small bowl, and set aside. Heat almonds and almond oil in a large skillet on medium-high heat, stirring and shaking the pan occasionally, until the almond skins are popping and almonds are fragrant. Turn down heat to medium-low and stir in chipotle mixture; heat and shake skillet for about 30 seconds, to release chipotle's oils. Move to a bowl and let cool just slightly before serving warm.

- Heat oven to 180C/160C fan/gas 4. Spread the nuts on a baking tray and roast for 15 mins. Tip the hot nuts into a bowl and toss with the butter, salt and paprika to taste, until coated. Tip the nuts back onto the tray and roast for 2 mins more to dry the coating onto them. Cool and store in an airtight container. The nuts will keep for 3 days.
