GARLIC-HERB ROASTED CHICKEN

Garlic and herbs roasting in and on the chicken make this roasted version so flavorful that you can eliminate the salt from the recipe if you'd like. The aroma from the oven while it's baking is tantalizing. -Cindy Steffen, Cedarburg, Wisconsin

  • Garlic-Herb Paste: Combine the rosemary, lemon zest, garlic, olive oil, cayenne, Dijon mustard, and salt and pepper to taste, in a small bowl. Stir to incorporate.
  • Rub chicken with Garlic-Herb Paste. Let marinate at room temperature for 1 hour.

Remove top skillet, flip the chicken and transfer to the oven. Cook until chicken is cooked through, about 35 minutes. Transfer to a serving platter and serve.

  • WHAT TO DRINK:
  • Chardonnay is a good match for this menu. In keeping with the spirit of this earth-friendly dinner, go with a domestic bottle. We like the 2006 Frog's Leap Chardonnay ($24) from Napa, which has bright citrus and stone fruit flavors.

1/2 teaspoon black peppercorns
3/4 teaspoon fine sea salt or coarse kosher salt

ROASTED GARLIC CHICKEN

Killer roasted chicken infused with garlic and herbs. This has become a family favorite that was inspired by a couple of different garlic chicken recipes (either the garlic was overcooked or the skin was not so good and crisp). Serve it with the baguette to sop up the juices and smear with garlic.
