Roasted Papaya with Brown Sugar image

Steps:

  • Preheat oven to 450 degrees. Stir together sugar and ginger in a small bowl. Arrange papaya halves, cut sides up, in a 10-by-13-inch baking dish. Sprinkle sugar mixture evenly over halves.
  • Bake, brushing papaya edges with melted sugar mixture (it will collect in well of fruit) 2 or 3 times, until mixture is bubbling and papaya edges are beginning to darken, 35 to 40 minutes.
  • Sprinkle each serving with a pinch of cayenne. Serve with lime wedges.

Steps:

  • Preheat a grill to high. Brush the papaya slices with olive oil and put on the grill. Grill for 3 minutes per side and then transfer to a cutting board. Cut the papaya into large chunks. Fill 2 bucket glasses each with 4 pieces of lime, grilled papaya chunks, 1 tablespoon of raw sugar, and muddle the ingredients. Wrap whole ice cubes in a kitchen towel and pound the ice with a rolling pin, cocktail muddler, or heavy pan to create crushed ice. Fill the glasses with crushed ice and add 1-ounce of cachaca to each glass. Using a bar spoon, give all ingredients a few spins and add additional crushed ice. Garnish each drink with 1 slice of grilled papaya, a mint sprig, and several papaya seeds.

Steps:

  • For roasted papaya:.
  • Preheat the oven to 350 degrees F, and spray a baking sheet with cooking spray.
  • Combine the honey and ginger, and brush over the papayas.
  • Place on the baking sheet, cut side up, and bake 15 minutes, or until nicely browned.
  • Serve warm.
  • For grilled papaya:.
  • Preheat a grill or indoor grill pan to medium-high heat. If using a grill pan, spray it with cooking spray.
  • Combine the honey and ginger and set aside.
  • Place the papayas on the grill (or grill pan), cut sides down, and grill 4 minutes. When you turn the papayas cut-side up, brush the honey mixture over the papayas, and grill 4 more minutes.
  • Serve warm.

Grilled Sambal Quail with Braised Green Papaya image

Steps:

  • Mix all ingredients, marinate and refrigerate quail for at least 6 hours; overnight is ideal. Season the quail and grill until done; this will take about 20 minutes. Be careful not to burn the skin. Place on top of the braised papaya. Garnish with chili oil. (Recipes for the braised papaya and chili oil to follow).
  • In a saucepan, melt butter and sugar together. Add papaya and cook for 5 minutes. Season. Add lime juice and chicken stock and simmer for 30 minutes or until papaya is al dente. Season with salt and pepper.
  • Heat chili and cumin in a saute pan until barely smoking. Whisk in oil and salt. Transfer to tall, glass jar and let stand overnight. Oil will separate.

Steps:

  • PAPAYA CHICKEN MARINADE:.
  • In a bowl, combine all ingredients for the marinade (except chicken).
  • Add chicken and immerse in marinade.
  • Set aside to marinate for a minimum of 1 hour up to 24 hours.
  • Prepare Papaya BBQ Sauce.
  • PAPAYA BBQ SAUCE:.
  • Heat oil in a pot over medium heat and add onion. Cook and stir until translucent ensuring onion does not brown.
  • Add sugar, scotch bonnet, zest of limes and lemon. Allow sugar to dissolve.
  • Add water, juice from lemon, limes and vinegar.
  • Bring to a boil.
  • Add papaya and season with salt.
  • Bring to a boil again and allow to simmer for 15 minutes.
  • Using a blender, puree sauce until smooth.
  • TO GRILL CHICKEN:.
  • Heat and oil grill.
  • Remove chicken from marinade and place on grill.
  • Baste each breast with 2 tablespoons of Papaya BBQ Sauce, continue basting occasionally until chicken is cooked through.
  • Garnish with chopped Spiced Cashews and cilantro leaves.
  • SPICED CASHEW NUTS:.
  • In a small frying pan, melt butter over medium heat.
  • Add cashews until golden brown. Remove from heat, add paprika and salt.
  • Use half of Spiced Cashew Nuts and chop for chicken and reserve the remainder whole to add to a salad.

This Southeast Asian-influenced dish is perfect for summer dining: it is light and refreshing, with tangy sweet-and-sour flavors. I love green papaya, an ingredient that has an appealing crunch and natural sweetness. Lemongrass, another one of my favorite Southeast Asian ingredients, adds a wonderful lemony fragrance. I cook with both at my restaurant.

Grilled Pork with Green Papaya Salad and Rice Noodles image

Steps:

  • To make the marinade, combine all the ingredients in a bowl. Add the pork and mix well. Cover and refrigerate for 20 minutes.
  • In the meantime, to prepare the green papaya salad, place all the ingredients in a bowl and toss to combine.
  • To prepare the dressing, place all the ingredients in a small bowl and whisk to combine. Drizzle over the salad and toss to combine thoroughly.
  • Heat a grill or grill pan over high heat. Add the pork and cook on each side for 1 minute, or until cooked through. Transfer the pork to a plate and cover to keep warm.
  • Place a large pot of water over high heat and bring to a boil. Add the rice noodles and cook, following package instructions. Drain well.
  • To assemble, arrange 1 cup of lettuce on each of 4 plates. Divide the noodles among the plates and place on top of the lettuce. Add one-fourth of the green papaya salad and pork to each plate. Garnish with the cilantro and toasted peanuts.
