Beef Tacos with Salsa Verde image

Steps:

  • Heat the vegetable oil in a large skillet over medium-high heat. Season the beef with the cumin, 1 teaspoon salt and 1/4 teaspoon pepper. Add to the skillet and cook until golden brown, about 3 minutes per side.
  • Transfer the meat to a 6-quart slow cooker, then add the salsa, onion and garlic. Cover and cook on high, 6 hours.
  • Remove the meat to a cutting board and shred with 2 forks, discarding the excess fat. Return the meat to the slow cooker and stir in the cilantro.
  • Serve the meat in tortillas and top as desired. Serve with lime wedges.

1 tablespoon vegetable oil
1 3-pound boneless beef chuck roast

1 16-ounce jar salsa verde
1/2 white onion, thinly sliced
2 cloves garlic, smashed
1/2 cup chopped fresh cilantro
12 corn tortillas, warmed

Steps:

  • Sprinkle 2 tablespoons thyme, coarse salt and pepper on baking sheet. Roll tenderloin in spice mixture. Cover; chill 3 hours.
  • Mix olive oil, capers, parsley, shallot and 1 tablespoon thyme in bowl. Season with salt and pepper. Let stand 1 hour.
  • Preheat oven to 400°F. Heat vegetable oil in heavy large skillet over high heat. Add tenderloin; cook until brown on all sides, about 10 minutes. Transfer to baking sheet. Roast until meat thermometer inserted into center registers 125°F. for rare, about 12 minutes. Remove from oven and let stand 5 minutes. Serve tenderloin with salsa.

  • Prepare grill for indirect cooking by igniting equal number of charcoal briquets on each side of fire grate, leaving space in center.   • Place roast in center of grid over drip pan; arrange vegetables around roast over coals. Grill roast, covered, 40 to 55 minutes for medium rare to medium doneness, turning occasionally. Grill tomatillos and jalapeño pepper 11 to 13 minutes or until skin of pepper is completely blackened and tomatillos are tender. Grill onion 18 to 20 minutes or until tender and browned, turning occasionally. Place pepper in food-safe plastic bag; close bag. Let stand 5 minutes.
  • Remove roast when instant-read thermometer inserted into thickest part of beef, not resting in fat, registers 135°F for medium rare; 150°F for medium. Transfer roast to carving board; tent loosely with aluminum foil. Let stand 10 to 15 minutes. (Temperature will continue to rise about 10°F to reach 145°F for medium rare; 160°F for medium.)
