ROBUST LENTIL SOUP, A LA " ATHENS MARKET"

There is an absolutely wonderful Greek Restaurant in downtown San Diego called "Athens Market." This is my rendition of the Lentil Soup served there.

Robust Lentil Soup, a La

Steps:

  • Rinse and drain lentils.
  • Combine lentils, water, green pepper, carrot, onion, bouillon granules, sage, ground red pepper and garlic in a Dutch oven.
  • Bring mixture to a boil and reduce heat to a simmer, covered, for about 30 minutes.
  • When vegetables and lentils are tender, stir in sausage and continue to heat until ready for service.
  • Serve soup into warmed bowls and garnish with snipped parsley.

1 cup dry lentils
5 cups water
1 cup chopped green bell pepper
1 cup sliced carrot
1/2 cup chopped yellow onion
2 teaspoons chicken bouillon granules
2 teaspoons snipped fresh sage (or 1/2 teaspoon dried sage)
1/4 teaspoon ground red pepper
2 garlic cloves, minced
1/2 lb fully cooked smoked link sausage, diagonally sliced
fresh parsley, snipped

LENTIL SOUP (TRULY GOOD AND EASY - EAT YOUR LENTILS!)

A wonderful lentil recipe and very, very easy to make. Lentils are one of my favourite pulses. I'm sure this soup will make them one of yours. Freezes beautifully to provide you with dinner later on down the line when time short and you want a meal on the table - fast!

Lentil Soup (truly good and easy - eat your lentils!) image

Steps:

  • Cook onions in oil over moderate heat, stirring occasionally, until softened; add garlic, celery and carrots.
  • Cook vegetables 10-15 minutes, until softened.
  • Add all remaining ingredients and simmer 1 1/2 - 2 hours or until lentils are tender.

2 large onions, chopped
1/4 cup olive oil
4 cloves garlic, minced
6 celery ribs, chopped
3 carrots, chopped coarse
1 teaspoon curry powder
1 teaspoon ground cumin
1 teaspoon salt
1 teaspoon pepper
1/2 teaspoon dried thyme, crumbled
5 cups water
5 cups chicken broth
2 bay leaves
2 teaspoons dark brown sugar
2 tablespoons ketchup
3 cups coarsely chopped canned plum tomatoes

  • To prepare this Greek lentil soup recipe, start by washing the lentils thoroughly and let them soak in water for about 2 hours. If you like, you can skip this process by adding them into a deep pan along with some water and place over high heat. As soon as they come to the boil, drain them into a colander.
  • Place a pan over medium-low heat and add the lentils, the water (warmed), the chopped onions, the chopped garlic and the bay leaves. Simmer with the lid on for about 25 minutes.
  • Pour in the olive oil and the red wine vinegar, and season well with salt and pepper. If you prefer your Greek lentil soup to be ‘reddened’, then add 1 tablespoon of tomato paste.
  • Boil the lentil soup for another 15 minutes, until it thickens and check out if they are done; keep in my mind that different kinds of lentils cook at different times.
