OLIVE-ROSEMARY MARTINI
A classic martini gets a festive makeover when garnished with oil-cured olives on a skewer of fragrant Olive-Rosemary Martini.

Steps:
- To make, shake 2 ounces gin and 2 teaspoons dry vermouth with crushed ice; strain into a stemmed glass. Strip leaves from bottom 2 inches of a rosemary sprig, skewer through pitted olives, and add to the drink.

- Skewer the tomato with a sprig of rosemary.
- Place vodka, vermouth and other sprig of rosemary in a cocktail shaker, half filled with ice.
- Shake vigorously and strain into chilled martini glass.
- Garnish with rosemary-skewered tomato.
PEAR MARTINI WITH LEMON AND ROSEMARY

- For rosemary syrup:
- Bring sugar and water to boil in small saucepan, stirring to dissolve sugar. Add rosemary sprigs. Reduce heat and simmer 2 minutes. Cool mixture completely. Discard rosemary.
- For martini:
- Mix rosemary syrup, vodka, lemon juice, and brandy in large pitcher. Cover pitcher with plastic wrap and place in freezer until mixture is cold, about 3 hours. Remove pitcher from freezer; add ice cubes. Stir briskly to melt ice partially. Strain mixture into chilled Martini glasses. Garnish each glass with rosemary sprig.

- Place the sugar, water and Meyer lemon peel in a small saucepan. Heat over medium heat, stirring frequently until the sugar dissolves. Increase the heat and bring the mixture to a boil. Reduce the heat back to medium and allow the mixture to simmer for 2 to 3 minutes. Set aside to cool completely. Remove the lemon peel and discard. Store the syrup in an airtight container in the refrigerator. Syrup can be made a day ahead.
- Place the rosemary sprig and 1 ounce of the simple syrup in the bottom of a cocktail shaker. Muddle with the end of a wooden spoon a few times.
- Strain the mixture into a chilled martini glass. Float a candied lemon slice or a sprig of rosemary on top of the martini and serve.
