MUSHROOM BLUE CHEESE TURKEY BURGERS
These are delicious turkey burgers that my kids even love. I make them more than I make beef patties. You would never know that you are using turkey instead of beef. Fabulous and very easy. Serve on toasted buns.

Steps:
- Preheat grill for high heat.
- In a medium bowl, mix together the ground turkey, mushrooms, onion, and soy sauce. Season with kosher salt and pepper. Form into 4 burger patties.
- Lightly oil the grill grate. Place patties on the prepared grill, and cook for 10 minutes per side, or until well done. Top with blue cheese during the last few minutes.

BLUE CHEESE TURKEY BURGERS
This recipe is super easy and a great way to serve turkey burgers! I do not put these on an outdoor grill as it tends to dry them out. The ciabatta rolls add so much but a regular hamburger bun would work just fine.

- Mix together the Ground Turkey, Dijon Mustard, Green Onions, Blue Cheese and Salt & Pepper
- Do not over mix as this will make the burgers tough. Shape into 4- 1/4 pound burgers Add 1 tablespoon of butter to a preheated grill pan and add burgers. Cook for about 7-8 minutes on each side until no longer pink.
- Butter ciabatta rolls and toast face down on a griddle or under the broiler until brown. Top with tomato, lettuce, onion, pickle and Mayo

- Combine meat with breadcrumbs, egg, hot sauce, salt & pepper. Mix well, and form into eight patties of the same size.
- Divide the blue cheese into four equal portions. Place a portion of the cheese atop one patty, then top with another patty. Fold the patty's edges together so the cheese is hidden in the center. Seal well so nothing leaks out when cooking. Repeat three more times to make four burgers in total.
- Heat the butter in a skillet of medium-high heat. Cook patties, flipping once, for about 15 minutes.
- Serve inside buns and top with more hot sauce, if desired. Maybe some sliced red onions, tomato and lettuce as well. I served mine in pitas and topped with baby arugula and hot sauce.
