RUBY RED JACK
I've been bartender for years. After I made this shot the first time my customers and staff couldn't get enough. But beware it does not taste like there is any liquor in it so it is easy to drink to many.

RUBY RUM BUCK
Bucks refer to drinks that combine lime and ginger beer, so a dark and stormy with lime is an example of a buck. In this version, I introduced aromatic bitters and homemade hibiscus syrup for extra flavor and a blush of color. Add your choice of garnish, such as a lime twist or a fresh hibiscus flower. Serve with a straw.

This is a good general barbeque rub! Sprinkle or rub onto ribs, tri-tips, steaks, chicken or whatever meat you desire! Let rubbed meat sit at least an hour before cooking.

DRY JERK RUB
This is a great Jamaican Rub recipe that is nice with poultry and pork. You can adjust the spicyness by increasing or decreasing the amount or type of crushed peppers. For a "not so hot" rub, use crushed red peppers. For a "really hot" rub, use dried scotch bonnet peppers.

- Toss beets, carrots, onion, garlic and thyme on a large baking sheet with olive oil, 1/2 teaspoon (three grams) salt and 1/4 teaspoon (one gram) pepper. Spread into an even layer and roast for 30 minutes, stirring halfway. Once cool enough to handle, squeeze garlic from skins.
- Transfer vegetables to a medium saucepan and add broth. Bring mixture to a boil and reduce heat to maintain a simmer. Cover and cook until vegetables are very tender, about 50 to 60 minutes.
- Remove thyme from saucepan then transfer mixture into a blender. Purée until smooth (in batches, if necessary).
