Steps:
- Toast the saffron strands in a dry pan over a medium heat for about 1 minute taking care not to burn them.
- Cool, and then crush them with the back of a spoon.
- Dissolve them in 1 tablespoon of very hot water.
- Heat the ghee (or whatever you use), and gently fry the onion, garlic, ginger and chillis until the onion is soft and golden.
- Add garlic.
- Add the dissolved saffron to the pan with the cardomon, then add the chicken.
- Turn the chicken pieces in the mix, coating well.
- Add the salt, cover and cook for 25 minutes until the chicken is tender.
- Uncover the pan and continue cooking, turning often until the liquid is almost gone.

This is one of my favorite recipes that I got from my mom. It's so good. [edit]I've changed the proportions of rice to water so that it'll cook correctly.

- Preheat oven to 375º.
- Melt butter in skillet. Cook chicken breasts until mostly cooked.
- In a large measuring cup (1 quart), mix onion soup mix, spices (feel free to sub whatever spices/seasoning and amounts that you want.) and can of cream of mushroom soup. Fill measuring cup with water to the 1 quart (4 cup) line.
- In large casserole dish, add rice and carrots. Add partly cooked chicken on top of rice and carrots. Pour soup mixture over chicken and rice.
- Cover casserole with aluminium foil.
- Cook for 45 minutes, or until rice has absorbed almost all of the liquid.
CHICKEN SCALLOPINE WITH SAFFRON CREAM SAUCE

- Warm the olive oil in a large skillet over high heat. Season the chicken
- cutlets with salt and pepper. Cook the chicken until golden and cooked
- through, about 2 to 3 minutes per side. Transfer the chicken to serving
- plate and tent with foil to keep warm. Turn the heat to medium, add the
- shallot and the garlic and cook until tender, about 2 minutes.
- Deglaze the pan with the white wine. Using a wooden spoon, scrape all the brown bits from the bottom of the pan. Cook until the wine is almost evaporated.
- Add the chicken broth and saffron threads, bring to a simmer and reduce for 10 minutes. Add the cream, salt, and pepper. Stir to combine and simmer for 1 minute to blend the flavors. Pour the sauce over the chicken.
- Sprinkle with parsley and serve immediately.
CHICKEN AND VEGETABLES IN SAFFRON BROTH
Steps:
- In a large saucepan, over medium high heat, bring to a boil the broth, water, 1 of the minced garlic cloves, carrots, turnips and half of the saffron. Cover and simmer until the vegetables are tender but still crisp, about 5 minutes. Meanwhile cut the chicken breasts into 3/4-inch dice. Finely chop the roasted red peppers and combine them with remaining minced garlic clove, remaining saffron and mayonnaise. Season to taste with salt and 1/8th teaspoon cayenne.
- When the vegetables are tender, add the chicken, bring the broth back to a simmer, and cook, uncovered, for 2 minutes or until the chicken is just cooked through. Season to taste with salt and cayenne.
- Spread each toast with saffron mayonnaise and set each one in a soup bowl. Ladle the steaming broth, vegetables and chicken over the bread and serve immediately. Leftover ideas: If you have half of the soup and the mayonnaise leftover the next day, then this is what you do. Bring the soup to a boil. Whisk one egg into remaining mayonnaise and ladle some hot soup into the mayonnaise to temper it. Whisk the egg mayonnaise back into the hot soup and stir, over low heat until broth has thickened. Do not boil the broth or the egg will curdle Remove from heat, adjust seasoning and serve right away.
MOROCCAN CHICKEN WITH SAFFRON AND PRESERVED LEMON

- Whisk 1/4 cup olive oil, garlic, turmeric, cumin seeds, salt, and pepper together in a bowl and pour into a resealable plastic bag or container. Add chicken, coat with the paste and seal bag or container. Marinate in the refrigerator, 4 hours to overnight.
- Heat 2 tablespoons olive oil in a large stockpot over medium-high heat. Add onion; cook and stir until soft and translucent, 5 to 7 minutes. Remove chicken from marinade, discarding marinade. Add chicken thighs skin-side down to stockpot and cook until browned, about 4 minutes. Flip chicken thighs and cook until browned on second side, about 3 minutes more.
- Lower heat to medium and add water to cover chicken halfway, cover stockpot, and cook for 20 minutes. Uncover stockpot, sprinkle saffron threads onto chicken, and top with preserved lemon slices. Replace cover and cook until chicken is no longer pink at the bone and juices run clear, about 5 minutes more. An instant-read thermometer inserted near the bone should read at least 165 degrees F (74 degrees C). Uncover stockpot and transfer chicken to a serving platter.
- Continue simmering liquid in stockpot until thickened to sauce consistency, 5 to 7 minutes. Spoon sauce over chicken; top with olives, artichokes, and parsley.

SPATCHCOCKED SAFFRON CHICKEN
Spatchcocking might be the easiest and quickest way to cook a whole chicken. The technique is reminiscent of an Omani practice that uses smooth riverbed stones placed over the embers of a fire to grill meat.

- To spatchcock a chicken, cut along each side of the backbone with shears. Remove the backbone and reserve it for stock (it can be frozen up to 3 months). Turn chicken breast-side up; flatten it with your palm.
- In a small bowl, combine mint, cilantro, 3 tablespoons ghee, 1 teaspoon salt, and 1/2 teaspoon saffron. Carefully loosen skin from breasts and thighs with your fingers and rub ghee mixture under skin. Place chicken on a plate, cover, and refrigerate at least 1 hour.
- Preheat oven to 350 degrees and heat a grill or grill pan over medium-high. Brush grill with oil to prevent sticking. Rub chicken with remaining 3 tablespoons ghee and season with remaining 1 teaspoon salt and 1/4 teaspoon saffron. Reduce heat to medium.
- Grill the chicken, skin-side down, for 20 minutes. For more even cooking, the chicken can be weighted with a foil-covered brick, if desired. Flip chicken and transfer to a rimmed baking sheet and cook until a thermometer inserted into the thickest part, without touching the bone, registers 165 degrees, 20 to 25 minutes more.
- Transfer to a plate, cover, and let rest for at least 10 minutes before serving.
SAFFRON CHICKEN KEBABS

- Slice chicken crosswise into thirds (about 2-inch pieces). Using your fingers or a mortar and pestle, crush saffron with 1/2 teaspoon salt, then add 1 teaspoon hot water; let stand 1 minute. Whisk together lime and orange juices, zest, saffron mixture, sliced onion, 2 teaspoons salt, 1/4 teaspoon pepper, and oil. Place chicken in a large resealable plastic bag; add marinade. Seal bag and massage meat to fully coat. Let stand at least 1 hour, or refrigerate up to 1 day.
- Prepare grill for direct-heat cooking. Remove chicken from marinade; thread each piece onto two skewers, so it lies flat. Skewer tomatoes and onion wedges. Season everything with salt and pepper; drizzle with oil. Working in batches, grill chicken and vegetables, flipping once, until charred in places and cooked through, 4 to 6 minutes per batch. Line a platter with lavash, then transfer cooked chicken and vegetables to platter. Sprinkle with sumac. Serve with radishes, mint, more lavash, and herb sauce.

- Sprinkle chicken all over with salt at least 30 minutes and up to 1 day ahead (chill, covered, if more than 30 minutes).
- Put ground saffron in a small glass or bowl with 2 tbsp. hot (not boiling) water and the rose water, if using. Stir to combine, then let steep 5 minutes.
- Heat a 12-in. frying pan over medium heat. Add oil, then arrange onion slices in a single layer; sprinkle with a pinch of salt. Scatter garlic over onions. Place chicken thighs on top in one layer if possible (a little overlap is okay since they'll shrink as they cook). Sprinkle with pepper, then lemon juice, then saffron water. If any saffron remains in bowl, add a bit of hot water, swirl, and add to chicken.
- Bring to a simmer, partially cover, and reduce heat to medium-low. Cook, turning a few times to coat in juices, until cooked through, 45 minutes to 1 hour. Season with salt and lemon juice if you like.
