BROWN SPANISH RICE

I like to use brown rice whenever possible, but Spanish rice recipes seem to all call for white. This recipe is the result of many attempts to come up with an easy yet spicy (Tex-Mex) version.

Brown Spanish Rice image

Steps:

  • Bring chicken broth, tomatoes, and salt to a boil in a medium saucepan; add rice. Cover, reduce heat to medium-low, and simmer until rice is cooked and liquid is absorbed, about 1 hour. Stir before serving.

Arroz: Spanish Rice image

Steps:

  • Open can of tomatoes and chicken broth and set aside. These ingredients have to be added quickly, so have them ready.
  • Heat lard or shortening in a saucepan on medium-high. Add rice, stirring constantly. When rice is brown, immediately add the onion and garlic and stir so it is evenly mixed. Quickly add the 2 tomatoes (squish them with your hand). Add 1/4 cup of liquid from the can of tomatoes and 3/4 of the entire amount of chicken broth. Bring to a full boil, cover and reduce heat to medium-low. Let simmer until rice is tender and most of broth has evaporated, about 20 to 30 minutes. (The remaining broth can be added if rice is still a little hard) Remove rice from heat and leave covered until ready to serve.

1 tablespoon lard or solid vegetable shortening
1 1/2 cups long grain rice

Steps:

  • in a bowl combine broth, cumin, chili powder, salt & half a can of el pato sauce (if you can't find el pato use regular tomato sauce).
  • brown rice, in hot oil, in a large skillet for approximately 5 minutes flipping occasionally.
  • add diced onion, minced garlic, sauté for 1 minute.
  • add seasoned broth, bring to a boil.
  • reduce heat to low, cover and simmer for 15 minutes. do not check on the rice before the 15 minutes is up, this will allow steam to escape and may make your rice turn out undercooked.
  • most of the water will absorb before the 15 minute time limit but keep covered and continue to steam for the entire 15 minutes. this will make for perfect rice that isnt crunchy.
  • after 15 minutes turn heat off, uncover & flip rice over. recover & let sit until everything else is ready. you can let the rice sit covered for up to 25 minutes which will cook out most of the moisture & leave perfect fluffy rice.

  • Place rice, water, onion, cumin, bay leaf, red pepper flakes, garlic sale, and pepper into medium saucepan, stir and bring to a rolling boil. Cover, reduce heat to low and simmer 35-40 minutes until water is absorbed. Remove from heat, remove the bay leaf, and allow the rice to sit for 5 minutes covered. In a separate pan, brown and drain the ground beef, add the celery and allow to cook for another 1-2 minutes. Stir in the crushed tomatoes, chili powder and cayenne. Then gently stir in the rice and 1/4 cup of the cheese. Place the mixture into a 9 or 10 inch square pan and sprinkle the remaining 1/4 cup cheese on top. Bake at 350 degrees uncovered for 30 minutes.
