TACO SALAD PUFF BOWL
This is a recipe which came out of my Best of Bisquick from Betty Crocker. This is a nice filling dish. I use this as my main dish. I serve it with a side of fruit or cottage cheese. I also place taco sauce and french dressing on the table for a condiment. Either one makes a nice dressing for this dish.

Steps:
- 1. Heat oven to 400 degrees. Generously grease a 9" pie plate ( I use pam). Heat margarine and water to boiling in 2-quart saucepan. Add baking mix, cornmeal and oregano leaves all at once. Stir vigorously over low heat until mixture forms a ball. Remove from heat and add eggs one at a time. Continue beating until smooth. Pour into pie pan (don not spread up the side). Bake 30-35 minutes until puffed and dry in the center. Cool.
- 2. Cook and stir ground beef and onion till beef is brown;drain. Stir in water and seasoning mix. Heat to boiling; reduce heat. Simmer uncovered stirring occasionally, 10 minutes. Place puff bowl on serving plate; fill with beef mixture. Top with remaining ingredients. Cut into wedges. Serve immediately.

Steps:
- Preheat oven to 400°.
- Spray 9-inch pie plate with non-stick spray.
- Heat water and margarine to boiling in 2-quart pan.
- Add Bisquick all at once.
- Stir vigorously over low heat until a ball forms.
- Remove from heat.
- Beat in eggs one at a time, continue beating until smooth.
- Spread in pie plate--DO NOT SPREAD UP SIDES.
- Bake until puffed up and dry in center, 35-40 minutes.
- Cool.
- Fill with tuna salad or any type of salad.
- Fill just before serving.
- To make a smaller puff, cut recipe in half.

- In a saucepan over medium heat, bring water and butter to a boil. Add flour all at once and stir until a smooth ball forms. Remove from the heat; let stand for 5 minutes. , Add eggs, one at a time, beating well after each addition. Continue beating until mixture is smooth and shiny. Drop by teaspoonfuls 2 in. apart onto greased baking sheets., Bake at 400° for 20-25 minutes or until lightly browned. Remove to wire racks. Immediately cut a slit in each puff to allow steam to escape; cool completely., In separate bowls, combine the ingredients for egg salad filling and ham salad filling. Split puffs and remove soft dough from inside. Just before serving, spoon fillings into cream puffs; replace tops. Refrigerate leftovers.

- In a small bowl, combine the mayonnaise, ranch dressing, sour cream, chives and pepper.

CHICKEN SALAD IN A PUFF BOWL
I got this recipe back in early to mid 2000's from cooks.com I have made this a couple times. I remember, I once served this to a couple of girlfriend's, I had over one summer afternoon. It was a hit with them. If I remember correctly, I served this also with little pieces of chopped apple as part of the salad.

- 1. CREAM PUFF BOWL: Prepare bowl first. In a medium saucepan melt 1/2 cup butter in 1 cup boiling water. Add 1 cup all-purpose flour and 1/4 teaspoon salt all at once. Stir vigorously until well blended. Cook and stir mixture over medium heat until mixture forms a ball that doesn't separate. Remove from heat; let stand 5 minutes. Add 4 eggs, one at a time, to mixture in pan, beating vigorously until smooth, about 1 minute after each addition. Batter should look thick and feel slightly sticky. Spread over bottom and up sides of a greased 9" pie plate. Bake in a 400F degree oven for 30 minutes or until golden. Cool.
- 2. Meanwhile, combine the chicken, grapes, cheese, celery and onion. Mix sour cream and mayonnaise or sour cream and salad dressing. Add to chicken mixture; toss well. Cover; chill until serving time. At serving time, line puff with lettuce. Spoon chicken mixture into puff. Sprinkle with nuts. Serve at once. Makes 6 servings.
- 3. **HINT: Making the chicken mixture ahead of time (2 hours or so), gives ingredients a chance to marry in the refrigerator.
PUFFY TACO SHELLS
I just don't get to San Antonio, home of the puffy taco, as much as I'd like to. So I tried to recreate it at home and it worked out great! Be sure you have the meat and fixings ready ahead of time so all you have to do is fry and fill! These work best when served as warm as possible.

- Mix masa harina, salt, and 1/2 cup plus 2 tablespoons water together in a bowl using your fingertips until dough forms and pulls away from the sides, 2 or 3 minutes. Form into a firm, flattened ball and divide into 8 equal portions. Roll each portion into a ball. Keep dough balls covered with a damp paper towel as you fry them, one at a time.
- Place dough ball between 2 sheets of plastic or a split open zip top bag. Flatten to form a small circle about 1/8 to 3/16 inch thick.
- Heat oil in a skillet over medium-high heat. When oil is hot, slide in the first circle. Very carefully baste hot oil over the top of the shell with a spoon to keep oil circulating over the top surface. When shell has puffed (after about 15 seconds), cook another few seconds and flip it over and cook another 30 seconds. Remove with a slotted spoon and drain on paper towels. Repeat for each shell.
- When shells are still warm and pliable, gently push down puffed tops to create room for the fillings and slightly crease the shells for folding.
- Fill with your favorite taco fixings and serve while shells are still warm.
