SALISBURY STEAKS WITH FRENCH ONION GRAVY

- Place a drizzle of EVOO in a skillet over medium heat and melt the butter into the oil. Add the onions, season with salt and pepper, a little ground thyme and add the bay. Caramelize the onions until very soft and sweet and light golden in color, 20 to 25 minutes.
- Meanwhile, soak the bread in milk or half-n-half. Place the meat in a bowl and add the egg. Squeeze out the bread and crumble into crumbs as you add to the bowl. Add the Worcestershire and grated onion to the beef. Sprinkle with salt and pepper and combine. Form into 4 (1-inch thick) oval loaves. Heat a drizzle of EVOO in a large skillet over medium-high heat. Add the loaves and cook until cooked through, about 15 minutes, turning occasionally. Transfer the meat to a plate.
- Sprinkle the flour over the caramelized onions, stir 1 minute. Deglaze the pan you cooked the meat in with the wine and pour into the onions. Add the beef stock and thicken a moment. Serve the gravy over the Salisbury steaks. Garnish with a little watercress, if desired.

- Directions: 1) To make gravy: Heat butter in a large sauté pan. Add onions and cook over medium-high heat, until onions start to brown, stirring occasionally. When onions are slightly softened and turning a deep honey brown, add 1/4 cup broth. Reduce heat, cover and continue cooking, adding more broth as needed to prevent caramelized bits at the bottom of the pan from burning. It should take at least 25 to 30 minutes to properly caramelize onions. Stir in flour and cook for about 2 minutes. Add wine and reduce by half. Stir in remaining beef broth.Simmer for 10 minutes. Add salt and pepper to taste. Reduce heat to low and keep warm. 2) To make patties: Mix ground beef,bread crumbs, egg yolk, salt, pepper, garlic, Worcestershire sauce, parsley and thyme in a bowl. Shape into 4 oval patties about 3/4-inch thick. Heat olive oil in a large nonstick skillet set over medium-high heat. Sear patties about 3 minutes per side, or until a brown crust forms. Pour gravy over patties and simmer for an additional 10 minutes. Serve warm with mashed potatoes or noodles. Yield: 4 Servings.

- In a large bowl, combine egg, 1/3 cup of soup, bread crumbs, salt and pepper. Add beef; mix gently. Shape into six oval patties. Brown in a skillet over medium heat for 3-4 minutes on each side. Remove and set aside; discard drippings. In the skillet, combine flour and water until smooth; add the ketchup, Worcestershire sauce, mustard and remaining soup; bring to a boil. Cook and stir for 2 minutes. Return patties to skillet. Cover and simmer for 15 minutes or until meat is no longer pink. Serve patties and gravy over noodles. Garnish with parsley if desired.

- In a large nonstick skillet, add the butter then sliced onions. Cook for 5 minutes on medium-high heat. Spread the onions on the sides, leaving the middle open. Add the meat. Continue cooking the, until the meat is lightly brown on both sides over medium-high heat. Best to move the onions around or place them on top of the meat as it as it cooks. Reduce the heat if they're browning too quickly or too much. Transfer the meat to a plate.
- Lower the heat to medium-low, using the same skillet with the drippings, add the garlic; stir. Add the flour, stir to combine with the onions, and slowly add the water while whisking so that no lumps linger. Add the salt, pepper, parsley flakes, cumin, cayenne pepper (if using), and Worcestershire sauce. Stir. Then add the meat.
- Spoon the gravy over the meat with the onions. Cover and cook for 10 minutes or until cooked through or until internal temperature reaches 160 degrees. Remove the skillet from the heat. Enjoy mashed potatoes, sweet peas, or potato salad, roasted carrots.
