SHRIMP MOUSSE TOPPED SALMON

Shrimp Mousse Topped Salmon image

Steps:

  • Preheat the oven to 350 degrees F.
  • To sear the salmon, sprinkle the fillets with the salt and pepper. Heat a pan over high heat with the oil until the pan is smoking hot. Place the salmon into the heated pan, reduce the heat and allow to sear on the first side for 2 to 3 minutes. Then flip and sear the second side, about 2 minutes. Then remove from the pan and allow to cool.
  • To create the mousse topping, first whip the whites until stiff. Next, in a food processor, puree the shrimp, and then add the parsley and seafood seasoning and pulse 7 to 8 times. Next, remove the shrimp and place in a bowl. Add the whipped whites and mix in a folding fashion. After creating the topping, evenly portion about 2 tablespoons of the mousse on top of the cooked salmon fillets.
  • To finish the salmon, evenly spread the seasoned breadcrumbs on top of the mousse. Finish in the oven, cooking for 10 minutes. Then remove and serve.

Four 6-ounce salmon fillets
1 teaspoon salt
1/2 teaspoon ground white pepper
2 tablespoons grapeseed oil
2 egg whites
8 ounces shrimp meat
1 teaspoon minced fresh parsley
1 teaspoon seafood seasoning, such as Old Bay
1/4 cup panko breadcrumbs mixed with 1 teaspoon parsley and thyme

SMOKED SALMON SPIRALS

This is a wonderful last minute or make ahead and freeze appetizer (they can be frozen up to 1 month). The recipe comes from The Canadian Living Christmas Book. Cooking time is time in freezer (must freeze for at least 4 hours).

Smoked Salmon Spirals image

Steps:

  • Lay some plastic wrap on your work surface and arrange the salmon on top in a 12 x 8 inch rectangle.
  • Mix cheese with dill and spread over salmon.
  • Press row of capers into cheese along one long edge.
  • Beginning at edge with capers, roll up jelly roll style to enclose capers in center.
  • Wrap in plastic wrap, squeezing to form smooth cylinder, and twist ends closed.
  • Freeze for at least 4 hours or up to 1 month.
  • To serve, thaw roll for 10 minutes, slice thinly, and arrange on cucumber slices.
  • Garnish with onion and dill.
  • Let stand for 10 minutes at room temperature.

Stuffed Salmon with Shrimp and Crab image

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly spray a sheet pan with cooking spray.
  • Cut a slit through the middle of each salmon fillet, about 2/3 the length of the fillet. Set aside.
  • Mix crab, shrimp, mushrooms, mayonnaise, Parmesan cheese, lemon juice, green onion, and bread crumbs together in a bowl.
  • Shape 2/3 of the stuffing mixture into 2 large mounds on the prepared sheet pan. Spread open the fillets and place one over each mound. Fill in the top of the slits with remaining stuffing. Season each fillet with seafood seasoning.
  • Bake in the preheated oven until salmon flakes easily with a fork and stuffing is hot, about 30 minutes.

Steps:

  • In a large saucepan, melt 3 tablespoons butter. Stir in flour until smooth; gradually add cream. Bring to a boil; cook and stir for 2 minutes or until thickened. Add 1 cup cheese, salt, mustard, dill and cayenne; stir until cheese is melted. Remove from the heat; stir in shrimp., Pat salmon dry; place in a greased 13x9-in. baking dish. Pour shrimp mixture over salmon. Top with remaining cheese. Bake, uncovered, at 400° for 25-30 minutes or until fish flakes easily with a fork and shrimp turn pink., Meanwhile, in a saucepan, saute garlic in remaining butter until tender.
