SALMON AND SPINACH FETTUCCINE
Inspired by my favorite local Italian restaurant's secret recipe. After some trial and error, I think I have it. Creamy Alfredo sauce and salmon complement each other well. Spinach adds great color.

Steps:
- Bring a large pot of lightly salted water to a boil. Add fettuccine, and cook for 11 to 13 minutes or until al dente; drain.
- In a medium saucepan over medium heat, melt the butter, and blend with milk. Mix in the flour to thicken. Gradually stir in the Parmesan cheese until melted.
- Crumble salmon into the butter mixture. Stir in the spinach, capers, sun-dried tomatoes, and oregano. Cook and stir about 3 minutes, until heated through. Serve over the cooked pasta.

We LOVE this recipe, even DH, who hates fish. It's from "Favorite Recipes from Quilters." Prep time approximate.

Steps:
- Cook macaroni.
- Drain salmon; break it into bite-size pieces.
- Make Sauce: Melt butter. Saute onion until transparent. Blend in flour, stirring constantly. Slowly stir milk into saucepan mixture. Cook until smooth and thick, stirring constantly. Add lemon juice and parsley. Mix well.
- Spoon pasta into sprayed casserole dish. Put salmon on top. Sprinkle with 3/4 cup cheese. Pour sauce over it, and sprinkle with the rest of the cheese.
- Bake at 375 for 25 min or until hot and lightly browned.
- NOTE: This doesn't make for a lot of sauce. To keep original proportions, double the butter, onion, flour, milk, lemon juice and parsley.

Steps:
- Remove stems from spinach.
- Cook spinach in boiling water 3 to 5 minutes or until tender.
- Drain,chop coarsely and spread over bottom of 8" shallow baking dish.
- In small skillet, melt 1 Tsp butter.
- Add mushrooms and cook, over medium heat, stirring often until lightly browned.
- Spread over spinach.
- In small saucepan melt 2 Tbsp butter.
- Stir in flour and cook, stirring over medium-low heat for 1 minute.
- Add milk and whisk until mixture simmers and is smooth and thickened.
- Stir in green onion and S& P to taste.
- Flake drained salmon, then spoon over mushrooms.
- Combine breadcrumbs, cheese and parsley; sprinkle over top.
- Bake in 400oF oven for 5 minutes or until heated through.
- Brown top under broiler for 2 minutes if necessary.

- Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 10 to 15 minutes. Drain.
- Mix reserved liquid from salmon and enough milk to make a total of 2 cups together in a measuring cup or bowl.
- Preheat oven to 375 degrees F (190 degrees C). Generously grease a casserole dish.

I got this recipe off the Rachael Ray show. Her recipe called for canned tuna. I did'nt have any so I used salmon steaks that I had from Costco. It was so good that It is now a weekly recipe in my house.. Yummo.. Enjoy..

- Place a large pot of water over high heat and bring up to a boil to cook the pasta. Once at a boil, add some salt and the pasta and cook until al dente, according to package directions. Drain pasta thoroughly, return it to the pot and reserve.
- In a large skillet over medium-high heat, heat 1 turn of the pan of EVOO and the butter. Cook garlic and onion until tender, about 2-3 minutes.
- Sprinkle in flour and cook for another minute then whisk in chicken stock and half-and-half, season with salt, ground black pepper and nutmeg. Bring it up to a bubble and thicken.
- Turn off the heat, fold in the parsley, grated Parmigiano Reggiano, cannellini beans, spinach, salmon flaked, penne.

- Boil the potato slices for 5 minutes (they will not be fully cooked). Drain and set aside.
- Saute the onions in the butter until translucent. Add the lox and dill, sauteing for a few more minutes. Salt and pepper to taste.
- Sprinkle the salmon steak with lemon juice and steam it for 5-8 minutes. It should flake easily.
- Preheat the oven to 375°F.
- Skin and bone the salmon and break into chunks. Stir fresh salmon and lox mixture in a large bowl.
- Grease a 9 x 9 inch baking dish, and cover the bottom of the pan with the potatoes.
- Layer the cream cheese cubes on top of the potatoes, then layer on the salmon mixture.
- Mix together the eggs and milk with salt and pepper and pour it on top of the other ingredients.
- Dust the top with paprika.
- Bake until firm and golden, about 40 minutes. Cut in squares and serve.

- Put the spinach in a really big saucepan (or two saucepans) and add a few tablespoons of water. Cover, set over a medium heat and cook for about 5-8 mins, turning the spinach over every so often, until wilted. Tip it into a colander to drain and allow it to cool (spread it out on a plate to cool it quicker). Take big handfuls of it in your fists and squeeze out the excess water. It's really important that you do this, otherwise the water will leach out and make the cream watery and green.
- Chop the spinach. Melt the butter in a saucepan and gently toss the spinach in it. Season with pepper and a tiny bit of salt (there's so much salt in the salmon). Heat the oven to 160C/140C fan/gas 3. Lay the spinach in the bottom of a gratin dish (about 30cm x 20cm), then arrange the salmon fillets on top.
- Heat the double cream in a small pan, then pour it all over the salmon and spinach. Bake for 35 mins, or until the top is golden and the cream is bubbling.

- In frying pan, heat 1 tbsp. butter. Cook half of diced onion until translucent. Add garlic. Add spinach and 1/4 cup water. Cover and let simmer about 10 minutes. Season with salt and pepper. Use a casserole dish that is large and shallow rather than narrow and deep. It will allow the potatoes and spinach to heat up quicker.
