B.C. ASPARAGUS AND SMOKED SALMON SALAD WITH CHIVE VINAIGRETTE
From British Columbia, Canada comes this salad of delicate asparagus spears draped with smoked salmon to create a special starter salad you can assemble in just 12 minutes. Prepare dressing and asparagus the night before. Wrap asparagus in paper towels in a sealed plastic bag. It will keep in refrigerator overnight. Assemble salad as directed when ready to serve.

Steps:
- Partially fill a large frying pan with water. Bring to a boil over high heat.
- Fill a bowl with ice water.
- In a small bowl, whisk vinegar with Dijon and salt. Whisk in oil. Add chives. Snap off and discard tough ends of asparagus.
- Slip asparagus into boiling water. Cook until tender-crisp, 2 to 3 minutes. Drain. Plunge into ice water. When cool, drain. Pat dry with paper towels.
- Place greens on salad plates. Top with a few asparagus spears. Loosely fold salmon over spears. Drizzle dressing over the top.
SALMON WITH CHOUCROUTE AND GEWüRZTRAMINER SAUCE

- Choucroute
- Heat the olive oil in a large skillet over medium-high heat. Add the onion and carrot and cook, stirring, until just wilted. Stir in the sauerkraut, stock, wine, and seasonings. Bring to a simmer and cook, covered, about 15 minutes, then set aside, still covered, to keep warm.
- Gewürztraminer Sauce
- Combine the wine, vinegar, and shallots in a small saucepan and bring to a boil. Lower the heat and simmer gently until the liquid is reduced to 2-3 tablespoons. Gradually add butter, in small pieces, whisking constantly, until all the butter is incorporated. The sauce should be a shiny, creamy yellow. Add salt. Taste, and adjust seasonings.
- Salmon
- Season the salmon with salt and pepper and coat with the bread crumb mixture. Heat the olive oil in a wide skillet over medium-high heat. When it is very hot but not smoking, add the salmon, presentation side down. Lower the heat to medium, add the butter, and use a spatula to lift the salmon, to allow butter to run under each fillet. Cook until it is golden brown, about 3 minutes. Turn and cook about 3 more minutes, until salmon is just medium-rare. Cook a little longer if you like it more done, but not long enough to dry it out.
- To Serve
- Divide the choucroute among four plates, top with a piece of salmon, and drizzle the sauce around the fish. Garnish with chives.
- Notes
- At Bayona, we use plain bread crumbs for this dish. But for a little more texture, try panko, Japanese bread crumbs (available at specialty markets and many grocery stores).
- Beurre blancs, or butter sauces, are known for breaking. Luckily it's a cinch to repair them. To fix a broken beurre blanc, skim the butter off the top and reserve the separated part of the sauce. In a small clean saucepan, heat 1 tablespoon of water to a simmer and whisk in the reserved sauce. Over a very gentle heat, whisk in the butter, a bit at a time, and the reserved sauce base should pull together.
PLANKED SALMON WITH BASIL CHIVE BUTTER
A tasty way to prepare salmon fillets. The basil chive butter can also be used to top vegetables or steaks.

Steps:
- For Basil Chive Butter:.
- Blanch the basil leaves in boiling salted water just until wilted, about 10 seconds. (This will retain the color.).
- Drain and transfer to ice water.
- Drain again and squeeze dry in paper towels or dish towel. (The basil must be dry.).
- Chop roughly.
- Puree the basil with olive oil and salt, adding butter a bit at a time.
- Remove to a bowl and stir in chives.
- Chill until it can be molded.
- Form into 4 equal pieces.
- Chill until serving time.
- For Salmon:.
- Soak cedar plank(s) in water to cover for 45 to 60 minutes. (You may have to weigh the plank(s) down with a can.).
- Preheat oven to 400 degrees.
- Transfer plank to a foil-lined baking sheet.
- Brush bottom of salmon with butter and sprinkle with a bit of the seasoning.
- Place on the cedar plank.
- Brush top with butter and sprinkle with seasoning.
- Roast for 14 to 20 minutes, depending on thickness of salmon.
- Remove salmon to serving plates and top each piece with a piece of Basil Chive butter.

I have not tried this recipe. I got this recipe from The Everything Low Carb Cookbook. Sea bass or snapper can be substituted for the salmon.

- In a medium size bowl, combine the mustard, orange zest, 1 1/2 tablespoons lemon juice, salt, pepper, butter, and 3 tablespoons of chives; mix well to blend.
- Preheat oven to 425.
- In a lightly buttered baking dish, place the fillets skin side down. Brush each fillet with the remaining lemon juice and season with salt and pepper. Spread about 2-2 1/2 tablespoons of butter mixture over each fillet to coat evenly.
- Bake for about 12 minutes or until done. To check for doneness, insert a thin-bladed knife into the thickest part of the fillet. The flesh should flake and separate easily and there should be no trace of translucence. The fish should be opaque and flaky. Transfer the fish to a warm platter and brush any remaining mustard chive butter over the fish while it is hot. Sprinkle with the remaining chives to garnish. Cut each fillet in half to serve.
- Cooking Times For Fish: As a rule of thumb, you can expect fish to take about 12 minutes per inch to cook through in a preheated 425 oven.

- Place asparagus spears into a large skillet, and pour in enough water to cover the bottom of the skillet about 1/2 inch deep. Place skillet over medium heat, bring to a boil, and reduce heat to medium-low. Simmer until the water has evaporated, about 5 minutes.
- Stir unsalted butter and pecans into the skillet with asparagus, and let simmer until asparagus are beginning to brown and pecans are fragrant, about 2 more minutes. Remove from heat.
- Season salmon fillets with salt and black pepper and set aside for about 5 minutes; pat off any excess moisture with paper towels.
- Heat olive oil in a skillet over medium-high heat, and pan-fry the salmon fillets in the hot oil until browned and the flesh flakes easily and is nearly opaque in the center, 4 to 5 minutes per side. Squeeze half a lemon over the salmon fillets as they cook.
- Fill a large pot with lightly salted water and bring to a boil; stir in the angel hair pasta, and return to a boil. Cook the pasta uncovered, stirring occasionally, until cooked through but still slightly firm, 4 to 5 minutes. Drain well and return to saucepan.
- Stir 2 tablespoons butter, parsley, and basil into the cooked pasta until coated; sprinkle with salt and black pepper to taste.
- To make sauce, melt 2 more tablespoons of butter in a small saucepan over low heat until melted; stir in Dijon mustard, and squeeze remaining lemon half into the sauce. Allow to simmer for about 3 minutes to blend flavors.

- Get a steamer on to boil. Put the salmon fillets in the first tier and steam for 3 mins until the salmon has changed colour. Throw the asparagus spears in with the salmon and continue to steam for 4-5 mins until the asparagus is tender and the fish is cooked.
- While everything's steaming, make a dressing by whisking together the olive oil, lemon juice and mustard. Tip the cannellini beans and spinach into a large bowl. When the asparagus is cooked scoop it into the bowl, then stir in the dressing. Divide the vegetables between two plates and sit the salmon on top.

- Heat broiler with rack 6 inches from heat. Whisk together soy sauce, lemon juice, and sesame oil.
- On a rimmed baking sheet, arrange asparagus and lemon wedges and brush with sauce. Broil 3 minutes. Add salmon to pan, brush with sauce, and season with salt and pepper. Serve, passing remaining sauce alongside.
