Steps:

  • Preheat oven to 350 degrees F.
  • In a large bowl, beat the cream cheese until smooth.
  • Blend in salsa and eggs.
  • Stir in cheddar cheese, olives, onion and garlic.
  • Lightly spray mini muffin pan with oil, fill with mixture.
  • Bake 15- 18 minutes until centers are set.
  • Remove from oven and cool in the pan for 5 minutes.
  • Top with additional salsa or sour cream if desired.

2 eggs, lightly beaten
1/2 cup shredded cheddar cheese
2 tablespoons chopped pitted ripe olives
1 tablespoon green onion, chopped

  • Preheat oven to 350 degrees.
  • In a mixing bowl, stir cream cheese until smooth.
  • Stir in salsa, eggs and cheese until well blended.
  • Generously spray mini muffin pan with vegetable oil.
  • Fill each muffin cup 3/4 full.
  • Bake 15-18 minutes or until center is set.
  • Let cool in pan 5 minutes.
  • Remove muffins to wire rack.
  • When cooled, spread tops with small amounts of sour cream and sprinkle with cilantro.
