WATERMELON MOJITOS
Is there anything more summery than a fresh, juicy watermelon? This mojito is perfect for summertime parties, BBQs, birthdays, and girls' nights. It's refreshing, delicious, and super easy to make on a hot day...not to mention it looks beautiful in your glass! So why not kick back, relax, and enjoy a tall glass of this mouthwatering cocktail and watch as your stresses just melt away. Garnish glasses with lime slices, mint, and watermelon slices if desired.

Steps:
- Place cubed watermelon in a blender and blend until smooth. Pour into a bowl through a mesh strainer to remove pulp. Measure out 2 cups of strained watermelon juice and set aside.
- Place mint leaves in the bottom of a pitcher. Pour in 1/2 the watermelon juice; muddle mint leaves with a muddler or the bottom of a wooden spoon.
- Pour remaining watermelon juice, lime juice, rum, and simple syrup into the pitcher. Fill with ice and top with club soda. Serve.

Steps:
- In a blender, in batches, puree watermelon. Pour through a fine-mesh sieve into a liquid-measuring cup, pressing on solids to extract as much liquid as possible (about 3 cups); discard solids.
- In a large container, combine mint, sugar, and lime. With the back of a wooden spoon, crush mint and lime until sugar is dissolved. Add watermelon juice and rum, fill container with ice, and stir to combine. Serve over more ice with mint sprigs.

- For each drink, muddle 2 watermelon chunks with the juice of 1 lime and 2 teaspoons sugar in a glass. Stir in a handful of mint leaves, then add 2 ounces white rum and ice to each glass. Top each drink with ginger ale and garnish with more mint.

- Use a mortar and pestle to mash the mint leaves. Remove and discard the rind and seeds of the watermelon. Put the fruit into a food processor fitted with the steel blade and puree. Put the mashed mint into a large pitcher with 2 cups of pureed watermelon, the rum, simple syrup, and lime juice and stir to combine. Pour the mixture into a pitcher for serving.
- Place ice cubes in 6 glasses and pour the mojito mixture into the glasses. Garnish with sprigs of fresh mint and spears of watermelon. Serve ice cold.

- Optional: Rim the glass with a mixture of equal parts sugar, salt and pepper
- Muddle limes, mint and syrup in a bar mixing shaker. Add ice and then watermelon puree and light rum. Shake vigorously. Pour into a highball or Collins glass, top with club soda or ginger ale. Garnish with a wedge of watermelon and fresh mint.
WATERMELON MOJITO
I just bought this amazing book entitled MIX SHAKE STIR. After reading through it last night I had to try one of these cocktails ASAP! It includes recipes from several of New York's finest restaurants. Stay tuned, as I know I'll be posting many of these in weeks to come! The author suggests to spruce up this drink by adding a watermelon wedge briefly seared on a hot grill.
