CHICKPEA, BARLEY, AND FETA SALAD

Recipe for a grain salad made with barley, garbanzo beans, feta, and green beans.

Chickpea, Barley, and Feta Salad image

Steps:

  • Cook green beans in a large pot of boiling salted water until crisp-tender, about 3 minutes. Using a sieve or a slotted spoon, transfer to a bowl of ice water.
  • Return water to a boil, add barley, and simmer until tender (refer to packaging for timing); drain. Let cool on a baking sheet.
  • Heat oil in a small skillet over medium heat. Cook sunflower seeds, tossing occasionally, until golden brown, about 5 minutes; let cool.
  • Toss green beans, barley, sunflower seeds, chickpeas, feta, dill, lemon juice, and vinaigrette in a large bowl.

8 ounces green beans, halved crosswise

1 cup pearled, hulled, or hull-less barley
1 teaspoon olive oil
1/4 cup raw sunflower seeds
1 15.5-ounce can chickpeas, rinsed
4 ounces feta, crumbled
2 tablespoons chopped fresh dill
2 tablespoons fresh lemon juice

Chickpea, charred aubergine & feta salad image

Steps:

  • Thinly slice the aubergine lengthways into 1cm-thick pieces, then slice each into three strips. Toss with 2 tbsp of the oil and some salt. Heat a griddle pan over a high heat or until almost smoking, then griddle the strips for 2-3 mins on each side until tender. T ransfer to a large bowl (you can also barbecue them if you prefer).
  • Mix the chilli flakes, lemon juice and remaining oil together with some seasoning. Tip the chickpeas into the bowl with the aubergine, add the dressing and mint, then toss everything together. Tip onto a serving platter, scatter over the pine nuts and feta, and scatter over some mint leaves to serve.

Steps:

  • Saute red onion and garlic in pan for a few minutes.
  • Remove onion/garlic mixture from heat and set aside to cool.
  • Drain chickpeas and finish preparing ingredients.
  • Juice Lemon.
  • Combine all ingredients in large bowl.
  • Toss / Mix and enjoy!
