BASIC WHITE CAKE
Forget the boxed mix! Making a white cake from scratch is so worth it. Our easy version has a moist, tender crumb and pairs well with any frosting.

- Preheat oven to 350 degrees. Butter baking pan. Line bottom with parchment paper; butter paper, and dust with flour, tapping out any excess. Set aside.
- Sift together flour, baking powder, and salt into a medium bowl, and set aside. Combine milk and vanilla in another bowl, and set aside. Beat butter in the bowl of an electric mixture fitted with the paddle attachment until pale and creamy. Add sugar in a steady stream, and continue beating until light and fluffy, about 3 minutes. Reduce speed to low. Add dry ingredients in 3 batches, alternating with the milk mixture and starting and ending with the dry ingredients. Be careful to avoid overbeating. Set aside.
- In a clean bowl of an electric mixer fitted with the whisk attachment, beat egg whites until stiff peaks form. Fold a third of the whites into batter until combined. Fold in remaining whites in 2 batches.
- Pour batter into prepared pan, and smooth top with a metal spatula. Bake until a tester inserted near the center comes out clean and the cake springs back when pressed lightly in the center, 35 to 45 minutes. Transfer to wire rack; cool 15 minutes before unmolding. Butter wire rack. Loosen cake sides with a paring knife, and invert cake onto greased rack. Reinvert to prevent it from splitting. Cool completely before using or storing in the freezer.
HEAVENLY WHITE CAKE
This is an old recipe I have for a white cake, and it tastes very good.

- Measure sifted cake flour, baking powder, and salt; sift together three times.
- In a mixing bowl, beat egg whites until foamy. Add 1/2 cup sugar gradually, and continue beating only until meringue will hold up in soft peaks.
- Beat butter until smooth. Gradually add remaining 1 cup sugar, and cream together until light and fluffy. Add sifted ingredients alternately with milk a small amount at a time, beating after each addition until smooth. Mix in flavorings. Add meringue, and mix thoroughly into batter. Spread batter in a 15 x 10 x 1 inch pan which has been lined on the bottom with parchment paper.
- Bake at 350 degrees F (175 degrees C) for 30 to 35 minutes. Cool cake in pan 10 minutes, then remove from pan and transfer to a wire rack to finish cooling. This cake may also be baked in two 9 inch round pans for 30 to 35 minutes, or in three 8 inch round pans for 25 to 30 minutes.

SAM HOUSTON WHITE CAKE

- Cream butter or margarine until soft and light. Add sugar gradually and continue creaming for several minutes to incorporate as much air as possible. Mix flour and baking powder and sift three times. Add extract to milk and water. Add flour alternately with liquid to creamed mixture; beat well after each addition. Beat egg whites until stiff but not dry and fold immediately into batter, blending thoroughly but quickly. Avoid beating. Pour batter into 3 greased and floured 9" layer cake pans. Bake in moderately hot oven (350 degrees F) for 30 minutes. Cool 5 minutes and remove from pans onto wire rack. Use 1/2 the recipe for Lemon Filling between the layers and frost top and sides with White Mountain Frosting. Or for a pure white cake, use Ever Ready Frosting between and on top and sides of layers. Frosting: Place chocolate in top of a double boiler; place over boiling water and cook until melted. Remove from heat; add sugar, salt and hot water. Beat on medium speed of electric mixer until thoroughly blended. Add egg yolks, one at a time, beating well after each addition. Add butter and vanilla, beating until frosting reaches spreading consistency. Yield: Enough for one 3 layer cake.
SIMPLE WHITE CAKE
This cake was sent home from our children's school. It is the simplest, great tasting cake I've ever made. Great to make with the kids, especially for cupcakes.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x9 inch pan or line a muffin pan with paper liners.
- In a medium bowl, cream together the sugar and butter. Beat in the eggs, one at a time, then stir in the vanilla. Combine flour and baking powder, add to the creamed mixture and mix well. Finally stir in the milk until batter is smooth. Pour or spoon batter into the prepared pan.
- Bake for 30 to 40 minutes in the preheated oven. For cupcakes, bake 20 to 25 minutes. Cake is done when it springs back to the touch.
