FRESH MOZZARELLA BALLS

Yield 1 pound mozzarella

Steps:
- Add 2 tablespoons salt to 4 cups simmering water.
- Chop the cheese curd and add to a large bowl. Pour the simmering water over the chopped curds.
- Use 2 wooden spoons to push the curds together to make one ball. Move the ball around in the water for roughly 1 minute so it can become pliable.
- While wearing thick dishwashing gloves, remove the curd from the water and pull it into a long cord and fold it back onto itself. Do not overwork the cheese or it will become tough.
- Pinch off the mozzarella to create balls and tuck the end under each ball for a neat appearance.
- Place the mozzarella into a bowl of cool water.
- Store in the salted water you used to soften the curd.
CHERRY MOCHA BALLS

- In a large bowl, cream butter and sugar until light and fluffy. Beat in vanilla. In another bowl, whisk flour, cocoa, coffee granules and salt; gradually beat into creamed mixture. Stir in pecans and cherries. If necessary, cover and refrigerate dough until firm enough to shape., Preheat oven to 350°. Shape dough into 1-in. balls; place 2 in. apart on ungreased baking sheets. Bake 15 minutes or until cookies are set. Cool completely on wire racks. Dust with confectioners' sugar. Freeze option: Freeze cookies, layered between waxed paper, in freezer containers. To use, thaw before serving.

I'm not a maraschino cherry lover, but these Mocha Balls sound so festive that I have to give them a try during the holidays. Prep time does not include refrigeration time of 1-2 hours for the dough.

- Preheat oven to 350 degrees. Form into 1-inch balls and place on cookie sheet. Bake for about 15-20 minutes or until cookies are light brown.
- Dust with powdered sugar while cookies are hot.

SCRUMPTIOUS SAUERKRAUT BALLS
The perfect party finger food. These are the most scrumptious sauerkraut balls you will ever taste!

- In a large skillet over medium high heat, fry pork sausage and onion until sausage is evenly brown and onion is soft, about 10 minutes. Drain and allow to cool slightly.
- Crumble sausage mixture into a large bowl and add drained sauerkraut, mustard, garlic salt, pepper and 2 tablespoons bread crumbs. Combine cream cheese and parsley, and mix into sauerkraut mixture. Refrigerate for 1 hour.
- Heat oil in deep-fryer to 375 degrees F (190 degrees C). Shape sauerkraut mixture into 3/4 inch balls. Coat balls with flour. In a small bowl, whisk together egg and milk. Dip floured balls in egg mixture and then roll in remaining bread crumbs.
- Deep fry in batches for 2 to 3 minutes or until golden brown. Drain on paper towels and serve hot.
