Steps:
- Cook sausage and onion until done; break into small pieces. Drain and set aside.
- Combine eggs, milk, salt, pepper, and mustard into mixing bowl. Mix well.
- Grease a 13 x 9 inch casserole dish with the butter or margarine.
- Layer the cubed bread, sausage, and 1/2 cup cheese into dish.
- Pour in the egg mixture and sprinkle with remaining cheese.
- Bake uncovered in preheated oven at 350 for 45 minute.
- This recipe can be prepared ahead of time and refrigerated prior to baking.

- Preheat the oven to 325 degrees F. Grease a 9-inch deep-dish pie plate with butter.
- Heat the butter in a large skillet over medium heat. Remove the sausage from its casing and place in the skillet. Cook, breaking apart the sausage with a wooden spoon, until cooked through and fully browned, about 10 minutes. Remove to a paper-towel-lined tray and set aside.
- Add the shallots to the same pan and cook until soft, about 2 minutes. Add the spinach, 1/4 teaspoon salt and 1/4 teaspoon pepper and cook until the spinach is tender and its water has evaporated, 5 to 7 minutes. Add the chopped sun-dried tomatoes and cook until heated through.
- Add the sausage to the prepared pie plate and then top with cooked spinach mixture.
- In a medium bowl, beat together the eggs, milk, 1/4 teaspoon salt and 1/4 teaspoon pepper until frothy, about 1 minute. Pour the egg mixture over the spinach and sausage. Place the circular piece of goat cheese in the center of the pie dish and arrange the oblong pieces around it like flower petals. Place the sun-dried tomato strips in between the goat cheese "petals."
- Bake for about 30 minutes, until set.

- Cut the bread into 1-inch cubes and spread in the bottom of a greased 9- by 13- by 2- inch casserole dish.
- In a medium skillet, brown the sausage over medium heat until fully cooked and no longer pink. Remove the sausage with a slotted spoon to drain the fat. Spread the cooked sausage over the bread and top with the cheese. Then stir together the, half-and-half, dry mustard, salt and eggs. Pour this mixture over the cheese. Cover the casserole with aluminum foil and refrigerate for 8 hours or overnight.
- The next day, preheat the oven to 350 degrees F.
- Bake the covered casserole until set and slightly golden, about 50 minutes. Remove from the oven and allow the casserole to set for 15 minutes before serving.

- In a large nonstick skillet, heat the oil over medium heat. Add the sausage and cook, stirring and breaking it up into smaller pieces, until it begins to brown, 3 to 5 minutes. Add the onion and bell pepper and cook until the onion is golden, about 5 minutes. Add the garlic and cook until fragrant, 45 to 60 seconds. Remove from the heat to cool slightly.
- Meanwhile, whisk together the eggs, milk, sage and parsley in a large bowl. Add the cubed bread, sausage-vegetable mixture and 1/4 cup of the cheese. Season with salt and pepper. Stir to combine. Cover and refrigerate for at least 30 minutes or overnight.
- Preheat the oven to 350 degrees F. Brush a medium casserole dish with oil. Pour the chilled bread mixture into the prepared casserole dish. Sprinkle with the remaining 1/4 cup of cheese. Let sit at room temperature for 20 minutes.
- Transfer the casserole to the oven and bake until puffed and golden brown, about 30 minutes. (If the top of the casserole starts to get too brown, cover it with aluminum foil.) Remove to a rack to cool slightly. Serve hot or warm.
JOLEAN'S CHEESE POTATO & SMOKED SAUSAGE CASSEROLE
This was another one of our favorites in the 70's Very inexpensive and very easy to make. Just recently found this recipe hand-written by my Mom, and the warm feelings flood back to me, because this was a true favorite in our house. Little did I know that she was on such a tight budget, yet made things like this that we all loved!! NOTE: The meat that was used in this recipe always varied, according to whatever we had available at the time.

- Cut skinless smoked sausage in half, lengthwise, and then chop into 1/2 inch "half moon" cuts. Cook in a frying pan for about 15 minutes, turning frequently to SLIGHTLY brown.
- Meanwhile, put cooked & diced potatoes in 2 quart casserole. Add cooked meat and give it a gentle toss.
- Mix all remaining ingredients (except for shredded cheddar cheese & the paprika) in a saucepan over medium heat until warm, melted and smooth. (Use a whisk and stir constantly.).
- Pour white/cheese sauce over potatoes and meat. Sprinkle shredded sharp cheddar cheese on top, and then sprinkle paprika evenly over the top.
- Bake in preheated 350°F oven for 35-45 minutes (watch, until golden brown on top).
- NOTE: You can substitute: 1/2 lb. hot dogs, sliced into 1/2-inch slices OR 1/2 lb. ham diced into 1/2-inch dices OR 12 oz. can of Spam diced into 1/2-inch dices, instead of the smoked sausage.
SIMPLE SAUSAGE CASSEROLE

- Butter an 8-inch-square baking dish; set aside. Put 3 tablespoons of the butter in a microwave-safe small bowl or liquid measure; microwave for 30 seconds to 1 minute to melt the butter.
- Whisk together the flour, baking powder, baking soda, 3 tablespoons of the sugar and 1/2 teaspoon salt in a large bowl. In a separate small bowl, whisk together the buttermilk, 2 eggs and the melted butter. Add the wet ingredients to the dry ingredients and stir until just combined.
- Heat a large nonstick skillet or griddle over medium heat. Melt a little of the remaining 1 tablespoon butter in the skillet. Working in batches, pour the batter by 1/4 cupfuls into the skillet and cook until the bottoms are golden brown and small bubbles appear on the tops, 2 to 3 minutes. Flip and cook until golden brown on the other sides, about 2 minutes. If the pancakes brown too quickly, reduce the heat to medium-low. Transfer the pancakes to a plate as finished. Repeat until all the batter is used, adding more butter to the skillet as necessary. (You should have at least 12 pancakes.)
- Whisk together the half-and-half, the remaining 5 eggs, the remaining 1 tablespoon sugar, the pepper and 1/4 teaspoon salt in a large bowl.
- Shingle half of the pancakes in the prepared baking dish. Scatter with half of the sausage, sprinkle with half of the cheese and scallions. Pour half the egg mixture evenly over the pancakes. Repeat with the remaining pancakes, sausage, cheese, scallions and egg mixture. Cover the dish with plastic wrap and refrigerate for at least 8 hours or up to overnight to allow the pancakes to soak in the custard.
- Preheat the oven to 350 degrees F. Remove the plastic wrap, cover the casserole loosely with foil and bake for 30 minutes. Uncover and continue to bake until golden brown, the custard is set and the center feels firm but springy, about 30 minutes more. Let cool 15 minutes before serving. Serve warm with maple syrup if you like.

- Preheat oven to 350°F.
- Grease a 2 quart shallow casserole.
- Heat water for the macaroni.
- Brown sausage in a large skillet, breaking up the sausage with the side of a spoon as it cooks.
- Pour into a colander to drain.
- Add the milk and processed cheese to the skillet, cook and stir over low heat until the cheese is melted.
- Stir in the sausage and tomatoes and remove from the heat.

CREAMY MACARONI AND CHEESE SAUSAGE CASSEROLE
Really you can add in anything you want to this, but I prefer sausage meat, frozen peas are also good to add in. Make certain to put a cookie sheet under the baking dish in case of spills, the casserole dish will be very full, or you can bake it in a larger casserole dish. This is delicious even made without the sausage meat added in, but for a main meal I suggest to add in the cooked sausage. You will love this!

- Remove the sausage meat from the casings and brown in a skillet; set aside.
- Cook the pasta in boiling salted water (do not cook completely, cook only until VERY firm-tender, as the pasta will cook further in the oven) drain, but DO NOT rinse.
- Place the drained macaroni back in the pot and add in the cooked sausage meat, mix to combine with a wooden spoon; set aside while preparing the cheese sauce.
- In a heavy bottom saucepan, melt the butter or margarine.
- Add in flour, black pepper and garlic powder; whisk for 5 minutes or until thick.
- Slowly add in the milk and whipping cream; whisk continuously for about 6-8 minutes until bubbly and thickened.
- Turn off the heat and add in grated cheddar cheese, Cheese Whiz and Parmeasn cheese; stir with a wooden spoon until all the cheeses have melted and the mixture is smooth (this should take about 3 minutes).
- Pour the cheese sauce over the pasta/sausage meat mixture; stir well with a wooden spoon.
- At this point season with salt if desired.
- Transfer the mixture into a buttered 13 x 9-inch baking dish or a larger casserole dish.
- Sprinkle with 1 cup grated cheddar cheese, then sprinkle with 1 cup Parmesan cheese.
- Set oven to 350 degree.
- If you are baking it in a 13x9-inch baking dish it will be very full, so place the casserole onto a cookie sheet to catch any spills.
- Bake uncovered for about 30-35 minutes, or until hot and bubbly.
- Let sit for 15 minutes or longer before serving.
- Delicious!
