SPICY SAUSAGE BALLS
These sausage balls are the perfect bite-size combination of cheese, meat and biscuits -- all rolled into one. A staple around the holidays in the South, they are perfect on their own as an appetizer, or served as a side dish at your holiday table.

Steps:
- Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment paper.
- In a large bowl, combine the sausage, Cheddar, baking mix, garlic powder and salt and knead with your hands until a homogenous dough forms (this will take about 5 minutes). Pinch off golf ball-size pieces of dough, roll them into balls and arrange them 1 inch apart on the prepared baking sheets.
- Bake until the sausage balls are golden brown and cooked through, about 25 minutes. Let cool for 5 minutes and serve warm or at room temperature. Store any leftover sausage balls in an airtight container for up to 1 week.
ITALIAN SAUSAGE BALLS
This version of sausage balls, a traditional southern appetizer, gets an Italian twist. Pickled cherry peppers add a touch of acid and spice that complements the richness of the sausage and the mozzarella.

- Position a rack in the top of the oven, and preheat to 375 degrees F. Line a rimmed baking sheet with parchment.
- Beat the sausage, mozzarella, flour and oil in the bowl of an electric stand mixer fitted with a paddle attachment until the mixture just comes together. Shape the mixture into balls, using a level tablespoon for each, and set them on the prepared baking sheet at least 1 inch apart (you should have about 24).
- Bake the sausage balls until lightly golden brown and slightly puffed, 12 to 15 minutes, turning them halfway through.
- To serve, skewer a basil leaf (if the leaves are large, fold them in half), a pepper slice and a sausage ball onto a toothpick. Repeat with the remaining toothpicks and ingredients.
SAUSAGE STUFFING BALLS
This baked sausage ball recipe was given to me by my cousin. They are appetizers, but they also make great meatballs.

- Preheat oven to 325 degrees F (165 degrees C).
- In a medium bowl, mix herb-seasoned dry bread stuffing mix with hot water. Gradually mix in pork until blended with the stuffing mix. Stir in onion, celery, egg and baking powder.
- Shape the mixture into 1 inch balls. Place the balls on a large baking sheet, cover with foil and bake in the preheated oven 15 minutes.
- Remove foil. Raise oven temperature to 350 degrees F (175 degrees C). Continue baking 25 minutes, until golden brown.

- Combine sausage, baking mix, Cheddar cheese, egg, and evaporated milk in the bowl of a stand mixer; mix on low speed until thoroughly combined.
- Shape sausage mixture into 1-inch balls and arrange onto baking sheets.
- Bake in preheated oven until no longer pink in the center, 8 to 10 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

MAKE-AHEAD BISQUICK SAUSAGE BALL APPETIZERS
These are so delicious, I have even made this with pork breakfast sausage meat, do not precook the sausage meat for this as the meat will cook when baked --- make a double batch of these and freeze them, they won't last long! You can also add in a couple teaspoons minced yellow onions or a green onion very finely chopped if desired --- *note* this recipe was developed using original Bisquick baking mix, I cannot promise the same results using a clone mix for this.

- Heat oven to 375 degrees F.
- Line a large baking sheet with foil, then spray lightly with cooking spray.
- In a large bowl mix the Bisquick baking mix with uncooked sausage meat, parsley, garlic shredded cheese, Parmesan cheese, half and half (or milk) pinch dried rosemary and black pepper.
- Using clean hands mix until well combined.
- Season with cayenne and salt (if using).
- Shape into about 1-inch balls and place onto the baking sheet.
- At this point you can freeze them on a tray then place into ziploc bags to bake later.
- Bake for about 20 minutes or until browned.
- remove from pan and place on a serving platter with a toothpick inserted.
- Serve warm with dipping sauce.

Steps:
- Preheat oven to 400 degrees.
- Shred cheese.
- Let cheese and sausage come to room temperature. You can rush this step in the microwave but take care not to melt the cheese or cook the sausage.
- Combine ingredients in a bowl. This is easiest done adding ingredients a third at a time and mixing with your hands. If you notice the mixture getting too crumbly and not sticking together, reduce the amount of all purpose baking mix when adding the last third.
- Form into balls about a quarter size in diameter. If they are larger this is fine, they will just need to cook longer.
- Place as many balls as possible on an ungreased cookie sheet leaving just enough space between so they are not touching.
- Bake in a 400 degree oven for 15 minutes. Adjust cooking time as necessary for the size of the balls formed.
- Great served warm or at room temperature. They reheat great in the microwave.

- Mix in a large bowl the flour, curry, paprika, salt and cheese. With pastry blender or 2 knives used scissors fashion, cut in butter until mixture resembles coarse crumbs. With hands shape into a ball. Cover and refrigerate.
- Meanwhile, shape heaping teaspoon of sausage meat into small balls. In a large skillet, over medium heat, fry until well browned. Drain thoroughly on paper towels.
- Divide dough into as many pieces as sausage balls. Then shape dough evenly around balls. Wrap and freeze.
- At Serving Time: Preheat oven to 400 degrees F. Place frozen sausage balls on a cookie sheet and bake 12-15 minutes until golden. Serve with toothpicks as appetizers.
