  • In 12 inch skillet, heat 3 Tbsp butter.
  • Add filets, skin side down, and saute on low heat for about 10 min turning often.
  • Add salt and pepper to taste.
  • Sprinkle with lemon juice and dill.
  • Remove to serving plate.
  • Add 2 Tbsp butter, and cream.
  • Cook and stir 1 minute.
  • Pour over salmon.
  • Serve with lemon slices.

Steps:

  • Wipe the fillets dry with paper towels and sprinkle with oil and lemon juice. Preheat broiler.
  • Heat the butter in a small saucepan and saute the sorrel leaves until they are limp. Add the stock and cream. Bring to boil, season, simmer until thickened slightly.
  • Pure sauce in a food processor and return it to pan. Heat through.
  • Broil the fillets for about five minutes on each side or until they are cooked. Arrange them on a serving platter. Serve the sauce separately.

Steps:

  • Trim the tough ends from the asparagus. Cut the asparagus into one-inch pieces. Peel the fava beans and slice the zucchini.
  • Heat the oil in a large skillet and saute the zucchini until lightly browned. Add the garlic and cook for one to two minutes, stirring to avoid letting it burn.
  • Meanwhile, blanch the asparagus and fava beans, drain and add them to the zucchini. Cook three to four minutes, or until tender. Season with salt, pepper and tarragon. Serve hot or at room temperature.
