PORK STEAKS WITH SAVORY CREAM OF MUSHROOM
I made this for my kids and I.. but I had so much left over that I ended up giving a plate to my neighbors and a friend tried left overs. My neighbors said that it was so good.. It was tender enough that you could pinch it with a fork and seemed as if it were made from a crock pot. I received wonderful reviews from this meal.

- 2. Preheat oven to 350 degrees. Heat oil in a skillet over medium-high heat. Season the steaks while browning.
- 3. Transfer the steaks to a 9x13 dish. Saute the onions and mushrooms. Add water, dry onion soup mix, and mushroom soup. Mix together until sauce forms. Pour over steaks. Cover dish in aluminum foil and place in over for 90 minutes.

I love the steak soup at our local steakhouse, but I wanted to lighten it up and more veggies. My family loves my version. Serve it with a loaf of crusty bread and a nice red wine.

- Brown beef in a large non stick soup pot. Salt and pepper to taste. Add onion while browning.
- Once browned, drain beef then return to the pot and add broth, soup mix, water, and potatoes. Brng to a boil, then reduce to a simmer.
- Simmer for 30 minutes. Stir in gravy mix and stir until soup is thickened.

- Heat the friendly fat in the bottom of your soup pot over medium/high heat while you toss the beef, 2 tablespoons of the arrowroot, salt, and pepper in a bowl to coat. When the oil is hot, carefully set the coated beef cubes in, searing the meat on all sides. Set the beef aside leaving the juices/oil behind in the pot.
- Over medium heat, add another tablespoon of oil along with the onions and mushrooms. Sprinkle with a big pinch of sea salt and cook over medium/medium-high heat for about 7 minutes, until the mushrooms and onions are softened and caramel in color.
- Add the garlic and cook for a minute, then add the coconut milk. Bring the coconut milk to a simmer for a minute or 2, and then add the last 2 tablespoons of arrowroot. Stir until everything thickens.
- Add the broth, seasonings, and seared beef to the pot and bring to a simmer. Keep the soup at a low simmer over low-medium heat for 10-15 minutes.
