SAZON
This is a copycat version of sazon, which I always use in Puerto Rican dishes. Other versions of this recipe call for only paprika or turmeric. I find adding both achieves the reddish-orange color without affecting flavor. The salt in this recipe can be reduced or omitted as many dishes call for additional salt. I prefer to omit and just add salt as needed to dishes while I'm cooking. I hope you will enjoy it!

SAZON - SEASONED SALT
According to Healthy Latin Cooking, this tangy, spiced salt is an indispensable seasoning in Puerto Rico. Unlike commercial mixes, this has no MSG. Sprinkle sazon on meats and seafoods, or use as table salt.

Steps:
- In a small, dry skillet, combine cumin seeds and both kinds of peppercorns.
- Roast over medium heat for 3 minutes, or until lightly toasted & fragrant. Transfer to small bowl to cool.
- In a spice mill or with a mortar and pestle, grind the roasted spices until they are a fine powder.
- Stir in salt, garlic powder and oregano.
- Store sazon in airtight containers in cool, dark place.
GOYA SAZON
This is a home-made version of the classic seasoning used in many Latin dishes. It is sold in packets and other forms.

SAZON (THE DRY MIX)
Found at Whats4Eats.com. This is a recipe a lot of people have been looking for; I hope it's what everyone wanted. If you can't find annatto, substitute paprika. NOTE: This is a copycat recipe, which is why the amount of salt is so high. If you want the same taste as commercial brands, use it all. If you don't want so much, feel free to adjust it to your taste, or leave it out entirely.

SAZON CHICKEN FINGERS
Perfect, moist, tender chicken fingers with a very subtle seasoning. I made these with red beans and rice and a salad for a delicious 30-minute meal. The spice I used is called "Knorr's Sazon Seasoning with onion, garlic, annatto and coriander" and it comes in a box with 12 packets.

Steps:
- Cut each chicken breast half on the diagonal into 4 strips.
- Lightly beat egg and water together in a flat bowl.
- Mix seasoning packet and salt with bread crumbs in another flat bowl.
- Shake chicken fingers in flour to coat (in a plastic bag).
- Dip in egg mix to coat well.
- Press into seasoned bread crumbs so each finger is completely coated. Set fingers aside on a plate to dry while you finish coating the rest.
- Heat about 1/2" of oil in a fry pan. Keep heat fairly high, as you want to fry these quickly.
- Fry each finger on both sides until golden, cutting into the thickest part of the first to guage timing. Don't overcook or they will be dry.
- Drain on paper towels.

SAZóN
Cumin-heavy sazón is among the most commonly used spice blends in Puerto Rican cooking, and is also popular throughout Latin America. This seasoning is an incredible cheat, and is typically found in the international section of most supermarkets. Commercial brands are flavor bombs pumped with monosodium glutamate - MSG - that can make almost anything taste better. While I'm not MSG-phobic, I do prefer making my own blends to control both the flavor and the salt content. This is my take on sazón, minus the MSG, and with turmeric added along with the standard annatto to imbue dishes with a golden hue. Adaptation is encouraged based on preference, and if you can't find ground annatto then sweet paprika is a perfect substitute. It will keep in an air-tight container for years.
