GRANNY'S APPLE SCALLOPED POTATOES
This scalloped potatoes with apples dish is delicious with breaded baked pork chops, which you could cook at the same time in another cast-iron pan. We are retired and it's just the two of us, but you could easily double the recipe. -Shirley Rickis, The Villages, Florida

SCALLOPED APPLES
When I was a child, I loved eating at my grandma's house, especially when she baked this comforting apple dish. As a busy mother of seven, I'm often short on time, so I use the microwave to fix it quickly. My family enjoys its "apple pie" flavor with a meal or topped with ice cream for dessert. -Sandy Daniels, Grandville, Michigan

APPLE YAM CASSEROLE
What Americans call yams are actually a variety of sweet potato. Fragrant sweet potatoes layered with Granny Smith apples and topped with a sweet mixture of brown sugar and raisins make this a great recipe for all holidays, but best for Thanksgiving and Christmas.
