Steps:

  • In a 6-quart slow cooker, combine the potatoes, carrots, onions, garlic, parsley, stout, olive oil, brown sugar and tomato paste. In a separate bowl, mix the flour with the salt and pepper. Dredge the beef pieces in the dry mixture, shaking off any excess.
  • In a medium skillet, melt the butter and canola oil over medium-high heat. In batches, add the beef pieces and sear until brown, about 2 minutes, transferring the beef to the slow cooker as done. Remove the last batch of beef to the slow cooker, add 1 cup of the chicken broth to the skillet and scrape up all the brown bits that have accumulated on the bottom of the pan. Add the pan juices to the slow cooker, along with the remaining 2 cups of chicken broth. Cover, and cook on high for 6 hours.

2 pounds Yukon gold potatoes, unpeeled, cut into 1-inch pieces
1 pound carrots, peeled and cut into 1-inch pieces
2 large onions, finely chopped
2 cloves garlic, minced
2 tablespoons fresh parsley, finely chopped
One 12-ounce bottle stout beer, such as Guinness Draught
1/4 cup olive oil
2 tablespoons light brown sugar
2 tablespoons tomato paste
1/2 cup all-purpose flour
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
One 4-pound boneless beef chuck roast, trimmed and cut into 1 1/2-inch pieces
2 tablespoons unsalted butter
2 tablespoons canola oil
3 cups chicken broth

BEEF AND IRISH STOUT STEW

This stew is great for St. Patrick's Day. The mixture of the beef and Guinness is awesome! I usually add more beer than the recipe calls for. Serve with mashed potatoes.

Steps:

  • Toss the beef cubes with 1 tablespoon of vegetable oil. In a separate bowl, stir together the flour, salt, pepper, and cayenne pepper. Dredge the beef in this to coat.
  • Heat the remaining oil in a deep skillet or Dutch oven over medium-high heat. Add the beef, and brown on all sides. Add the onions, and garlic. Stir the tomato paste into a small amount of water to dilute; pour into the pan and stir to blend. Reduce the heat to medium, cover, and cook for 5 minutes.
  • Pour 1/2 cup of the beer into the pan, and as it begins to boil, scrape any bits of food from the bottom of the pan with a wooden spoon. This adds a lot of flavor to the broth. Pour in the rest of the beer, and add the carrots and thyme. Cover, reduce heat to low, and simmer for 2 to 3 hours, stirring occasionally. Taste and adjust seasoning before serving. Garnish with chopped parsley.

Cooking it in the crockpot makes it so easy to have dinner ready in no time. It is suggested that this be served with a Scotch beer or ale and some heavy crusty bread.

  • In a large enameled cast-iron casserole, heat 1 tablespoon of the olive oil until shimmering. Spread the flour in a shallow bowl. Season the beef with salt and pepper and dredge in the flour; shake off any excess flour. Add half of the meat to the casserole and cook over moderately high heat until browned on the bottom, about 3 minutes. Reduce the heat to moderate and cook until browned on the other side, about 2 minutes longer. With a slotted spoon, transfer the meat to a bowl. Repeat with the remaining 1 tablespoon of oil and floured meat, browning the meat over moderate heat.
  • Melt the butter in the casserole. Add the onions, carrots, celery and rutabaga and cook over moderately low heat, stirring occasionally, until the onion is softened, about 7 minutes. Add the jelly and the wine and bring to a boil over high heat, stirring to scrape up any browned bits on the bottom of the casserole. Add the beef stock and bring to a boil. Add the browned meat and any accumulated juices along with the thyme, garlic and bay leaf and bring to a simmer. Cover and simmer over low heat until the meat is tender, about 1 1/2 hours.
  • With a slotted spoon, transfer the meat to a bowl. Boil the sauce over high heat until reduced to 2 cups, about 10 minutes. Return the meat to the casserole and season with salt and pepper. Discard the thyme sprig and bay leaf. Serve the stew with the Skirlie Potato Cakes.

  • Scottish Mince Recipe with Tatties. Mince is the British name for ground meat, and it usually refers to beef. If you’ve ever been to England or Scotland, you may have seen simply “mince and potatoes” on pub menus.
  • Scottish Rumbledethumps. This fantastic, vegetarian-friendly side (though it could be a main, too) is super affordable and makes a nice change from the usual mashed potatoes.
  • Scottish Bubbles And Squeak Patties. Bubbles and squeak can be made and served as a side with roast chicken or pork, but it’s often made the day after a big dinner with leftovers.
  • Scottish Oatmeal Rolls. Oats are a huge part of Scottish cuisine, and these rolls are no exception. They’re light but have a distinct oaty texture, which I think you’ll fall in love with.
  • Haggis. We’ve all heard of haggis, but how many people know what it actually is? I have to admit, I’ve tried it, and I wasn’t 100% sure what I was eating at the time.
  • Traditional Old-Fashioned Scottish Flummery Recipe. Flummery can be traced back to royal feasts in the 15th century, so you know they must be doing something right here.
  • Traditional Scottish Shortbread. Shortbread was invented in Scotland, so if you want the best recipe, look for something with Scottish in the title, like this recipe!
  • Easy Traditional Scottish Crumpets. Scottish crumpets are a little different from English, which typically use yeast and require resting time. The batter is pretty thick, and they’re made with metal rings, so they stay perfectly round and rise like a dream.
  • Scottish Steak Pie. Spend a little time in the UK or Australia, and you’ll soon learn that their pie culture is pretty intense. And by pie, I mean meat pie.
  • Slow Cooked Scottish Beef Stew. I adore beef stew! It’s the most comforting food, and when it’s done right and the meat is super tender, I can’t stop at just one bowl.
