APPLE CRUNCH PIE I
This pie has a delicious sweet crumb topping with a tart, but sweet, apple filling. Eat straight or ala' mode.

Steps:
- Place rack in lowest position in oven. Heat oven to 450 degrees F ( 230 degrees C).
- To Make Topping: Mix 1 cup flour, 1/2 cup brown sugar, 1/2 cup white sugar and 1 teaspoon cinnamon; cut in butter or margarine until mixture is moist and crumbly, and clumps together easily.
- To Make Filling: Peel, core, and slice apples into approximately 1/8 inch slices. If you cut them too thick you'll have crunchy apples. In another bowl, toss cut up apples, white sugar, lemon juice, 1 teaspoon cinnamon and nutmeg. Sprinkle in flour, and stir until apples are evenly coated.
- Layer apple slices in pie shell. You will have a lot of apples, but they will shrink. Layer them higher in the middle. Pour left over juice from apple mixture over apples. Pat the brown sugar topping evenly over apples to make a top crust.
- Place pie on cookie sheet in oven to catch juice droppings. Bake for 15 minutes. Reduce oven temperature to 350 degrees F (175 degrees C), and bake for 45 minutes to one hour; bake until center of pie has no resistance. If top starts to get too dark, cover with piece of foil. Cool on wire rack before serving.

CRUNCHY CRUMB APPLE PIE
This is a yummie alternative to an old favorite. The topping is sweet and the apples are a little tart. I posted this with a ready-to-bake pie crust, but I have found a homemade crust is always better! There are tons of apples in this pie but they cook down during baking. This is delicious topped with vanillia ice cream.

Steps:
- Have Ready a 9-in.
- pie plate and a baking sheet.
- Place oven rack in lowest position in oven.
- Heat oven to 450.
- Line pie plate with pie crust as package directs.
- Flute or crimp edge.
- TOPPING: Mix flour, sugars and cinnamon in medium bowl.
- Cut in butter (or rub in with fingertips) until mixture forms moist, coarse crumbs that clump together easily.
- FILLING: Peel, halve and core apples.
- Cut in 1/8 inch-thick slices (or with a slicing disk of a food processor).
- Place in a large bowl, add lemon juice and toss to coat.
- Mix remaining ingredients in a small bowl, sprinkle over appl slices and toss to coat.
- Layer apple slices in pie shell, mounding them higher in center.
- Pat topping evenly over apples to form a top crust.
- Place pie on the baking sheet to catch any drips.
- Bake 15 minutes.
- Reduce oven temp to 350 and bake 45 minutes longer or until a skewer meets some resistance when center of pie is pierced (apples will continue cooking after pie is removed from oven) and topping is golden brown.
- (If topping browns too quickly, drape a piece of foil loosely over the pie).
- Cool completely on a wire rack before serving.

Steps:
- Preheat oven to 190C fan forced (conventional 210C).
- Combine apples, cinnamon and sugar in a bowl and spoon mixture into a rectangular ceramic baking dish.
- Place fillo on a clean work surface and lightly spray one filo sheet with olive oil spray.
- Fold each in half crossway and scrunch into a rosette sheape.
- Place on the apple mixture, repeating with remaining fillo.
- Lightly spray the pastry again.
- Bake for 15 minutes or until golden.
- Dust with icing sugar and. cut and serve with cream or I think custard would work well too.

- Use foil on bottom of oven rather than a cookie sheet under pie pan.
- Prepare pastry for single-crust pie.
- Place in pie plate and trim and crimp the edge; refrigerate 30 minute loosely covered with plastic wrap.
- In a large mixing bowl, stir together the sugar, flour, cinnamon, nutmeg, allspice, and salt.
- Add apple slices and gently toss until they are coated well.
- Transfer mixture to pie.
- FOR CRUMB TOPPING: Stir together brown sugar, flour, and oats.
- Using a pastry blender, cut in the butter until topping resembles coarse crumbs.
- Sprinkle over apple mixture in pie.
- To prevent over-browning while baking, cover edge of pie with foil.
- Bake at 375 degrees Fahrenheit for 25 minutes.
- Remove foil and bake 25 to 30 minutes more, or until top is golden.
- Remove from oven.
- Cool on wire rack about an hour and serve!

- For crust:
- Blend first 4 ingredients in processor. Add butter and shortening; using on/off turns, process until butter is reduced to pea-size pieces. Add 5 tablespoons milk and blend until moist clumps form, adding more milk by teaspoonfuls if dough is dry. Gather dough into ball; flatten into disk. Wrap in plastic; chill at least 1 hour and up to 1 day.
- for topping:
- Combine first 4 ingredients in medium bowl. Gradually add butter, stirring until moist clumps form. (Can be made 1 day ahead. Cover; chill.)
- For filling:
- Preheat oven to 400°F. Stir apples, sugar and lemon juice in large bowl to blend.
- Roll out dough on lightly floured sheet of parchment paper to 14-inch round, occasionally lifting and turning dough to prevent sticking. Transfer dough on parchment to rimless baking sheet. Leaving 2-inch plain border, spread preserves over center of dough. Sprinkle preserves with 3/4 cup topping mixture. Spoon apple mixture over topping, mounding slightly in center; sprinkle apples with remaining topping. Using parchment as aid, fold dough border in over apple filling (border will not cover filling completely). Press border firmly to hold shape and keep in place. Carefully peel back parchment. Brush border generously with glaze.
- Bake pie until crust is set, about 25 minutes. Reduce temperature to 325°F. Bake until apples are tender, covering topping loosely with foil if browning too quickly, about 40 minutes longer. Cool pie on baking sheet at least 30 minutes. Serve warm or at room temperature.
CRUNCHY SWEET CARAMEL APPLE PIE
This is the most wonderful apple pie recipe! It was the winner of Emeril's contest for the best apple pie on Good Morning America in 2001. Absolutely mouthwatering!

- Preheat oven to 375.
- Prepare the crumb topping first by combining the sugar flour and rolled oats in a bowl.
- Cut in the 1/2 cup of butter until mixture resembles coarse crumbs and set aside.
- For the pie, stir together the sugar, flour, cinnamon and salt in a large mixing bowl.
- Add apple slices and toss gently until coated.
- Transfer the apple mixture to the pie shell.
- (If using a store bought pie shell, remove it from the aluminum pie plate and transfer it to a 9" pie plate of your own-- it looks better!) Sprinkle crumb topping over apple mixture.
- Cover edges of pie with aluminum foil.
- Bake for 25 minutes, then remove foil and bake another 25 to 30 minutes.
- Remove from oven and sprinkle with chopped pecans and drizzle with caramel sauce.
- Cool on a wire rack.

- Mix the white sugar 1 tablespoon of the cinnamon and the nutmeg together in a small bowl. Layer apples then sugar mixture. Then repeat the layering until out of apples.
- Mix together the flour and brown sugar and cinnamon and butter. Use a fork until it becomes crumbly. Sprinkle mixture on top of apples.
- Bake in a preheated 425 degree F (220 degree C) oven for 40-50 minutes. Cover the top for the remaining 15 minutes to avoid over browning.

- To prepare crust, in a medium bowl, whisk together flour and salt.
- Using a pastry blender, cut shortening into flour mixture until it resembles coarse crumbs.
- Add water, 1 tablespoon at a time, tossing with a fork, until a dough forms.
- Shape into a disc, wrap in plastic wrap and chill for 30 minutes.
- Place oven rack in lowest position.
- Preheat oven to 400F degrees.
- On a floured surface, roll dough into a 12 inch circle.
- Fit into a 9 inch pie pan, Trim excess dough, leaving a 1 inch overhang.
- Make a decorative edge.
- To prepare filling, mix together all ingredients.
- Spoon into crust.
- To prepare topping, in a small bowl, mix together brown sugar, flour and nutmeg.
- Using a pastry blender, cut butter into brown sugar mixture until mixture resembles coarse crumbs.
- Sprinkle evenly over apples.
- Bake pie until topping is lightly browned and filling is bubbly, approximately 35 minutes.
- If pie is getting too brown, cover loosely with tin foil.
SINFUL APPLE PIE
A nice HOUSE WARMING GIFT! Serve with vanilla ice cream. My choice of apples are granny smiths but use what you like. You can also add 1/4 cup rum soaked raisins to the filling.

- Mix apples, 1/4 cup brown sugar, white sugar, 1/4 cup flour, and cinnamon together in a bowl.

- Preheat oven to 425 degrees F (220 degrees C). Fit pastry shell into pie pan and place in freezer.
- To Make Apple Filling: Place apples in a large bowl. In a separate bowl combine 2 tablespoons flour, white sugar, 1/2 teaspoon cinnamon, nutmeg, and allspice. Mix well, then add to apples. Toss until apples are evenly coated.
